In the Shrek Extra Large Anime, there is a callback to this cut. It was later officially confirmed by Nomura.
Disney had the foresight to not let them be able to use other Disney characters besides the trio, otherwise can you imagine the drama if pics of Elsa, Anna, Rapunzel, etc. get these kinds of photos shared around from an official Disney game?

Rapunzel's tower all the way to the Kingdom is a big massive land of collisions without any load times. In fact, the San Francisco bridge would have been a perfect spot for the data greeting. I hate to say it, but I think Square was just being a bit lazy.
