  • WE SMOKED A WHOLE NATIVE PIG IN APAYAO!
    Sinapan is a traditional Isnag method of preserving meat that's been caught, usually through hunting in the forest. Centuries ago, refrigeration did not exist - so locals had to smoke meat instead to keep it for as long as 3 months.
    We travel to the Paco Valley for this, a forested part of Kabugao in Apayao.
    First, they flame-grill the whole pig over the fire for better flavour, while scraping off the top layer of skin.
    Then, the pig is butchered - a process which takes hours.
    The liver, heart, fat and intestines are removed and cooked in bamboo using a process called "sinursur" (grinding - especially the chili) or "pinalatan" (boiling the intestines with chili and pomelo leaves).
    We'll also grill some of the meat for lunch - it can be eaten medium rare, just seasoned with salt and lemon!
    Smoking the meat is simple - a wood fire kept going for 2-3 days. Smoked under banana leaves, the end result is just sublime!

      I agree. Our tourism board must give Kumander Daot an award for promoting the remotest part of our country to the world. We filipinos do not even know that such places existed and inhabited. For promoting the culture, heritage, traditions and the filipino people by an european is something our tourism board must put to consideration together with canadian vlogger becoming filipino. These world class vloggers must be recognized and be rewarded. They deserve it. Not even our tourism board or any other agencies have done this. Kudos to you Ansel of Kumander Daot vlog and Kulas of Becoming Filipino vlog for this outstanding deeds you made for us filipinos.

    Kumnader Daot im so sad youre not nominated in tourism award. For me youre the #1 because without you're blog i cant appreciate the beauty of phillipines. Only you're channel that i saw all about the hidden part of phillipines especially the Mindanao. You put yourself sometime in a risky sintuation but i salute youre courage and dedication and your inspiration also to help poor filipinos by giving work through your fishpond and also your calamansi.     Calayan island and Batanes looks like Northern Ireland. Your favorite kwatro kantos is there. Apayao became NPA stronghold because of its remoteness and it's very forested.

    Another great vlog! The bamboo cooking reminded me of CNN's Anthony Bourdain travel and food show. Your presentation of the entire process of preparing the pig, cooking various dishes and preserving meat was so interesting. Bourdain would have made a good content of this Filipino tradition but I think you did a better and great job. I'm also amazed that this tradition of bamboo cooking is practiced both in the north and the south (Tiboli). Thanks for this awesome vlog. As always, I love your drone shots showcasing the beautiful landscape of the country.

    I think the natural communion wine may need to be fermented a little bit longer before it's ready.😜
    That was a brilliant feast that they made from the native pig. While I'm not a fan of liver, I would not have refused any of that just because it had liver mixed in. Everything looked so delicious, especially the 1000 peso barbecue sticks! If you ever go to Hawaii, KD, you should try a Hawaiian dish named squid luau. It is made with squid, taro leaves, and coconut milk, which I know you would love, and it looks so much like the dish you ate there that was cooked with taro leaves.
