    You can fry the polenta up and put maple syrup or cooked berries on top and eat it for breakfast

    Even if you consider yourself a bit of a prepper like me, cleaning out your storage/pantry a bit is a good idea to make sure you use up what you have. Of course it all depends on the shelf life of foods and the amounts of what you do have. The other day I found 3 opened boxes of pasta. Were they different shapes? Yes. But, could I put those bits and pieces together to make a meal? Sure. Then I'll have more space for other things in my pantry.

      Exactly!!! We have that same thing constantly because it’s just the two I’d us sometimes things are half eaten and they do have to be used!! I’d rather find ways to use the little odds and ends than toss them because I put it off and let them sit!!

    Two things I like to do with polenta. First if you are using the polenta in the tube (as you did in the video), you can cube the polenta and use it as a substitute for tofu. I have a soy allergy, and I use cubed polenta in things like tofu-potato curry, instead of tofu. The second thing I do is make polenta from scratch in a pot. The polenta gets poured onto a baking sheet and baked as a gluten-free pizza crust.

      Yum to both!! I hadn't thought about it as a tofu sub but that sounds great!! I've made my own polenta with grits before but now I need to try it for a pizza crust!!

    I was on a polenta kick for awhile some years back. One thing I would do is slice it ( maybe just slightly thinner than in your video) and then pan fry, and top with warm refried beans, then another polenta, then refried beans, etc., think little stacks. I would top with green chilies or salsa, but you could really do anything Mexican inspired. They were really good! I also just saw something where they air fried the polenta, so that might be worth a try!

    Also if you combine plant milk and chop up you polenta it will melt and be like creamy grits. You can add spices and serve like mash potatoes on your recipes just an fyi

    So appreciate your videos. I'm not the best at meal planning and often neglect utilizing canned, jared, and even flours and freezer items I have on hand. My goal over next couple weeks it's to ensure I'm doing just that. Thanks so Miranda!

    IHOP used to have corncake pancakes on their menu. I was so disappointed when they stopped making them. They were my go-to order, I loved them. The copycat recipes out there are pretty satisfactory. Corncake pancakes are delicious!

    Cornbread pancakes...... LOVE THEM ..... I put a can of drained Rotel and some vegan cheese in them and you have Mexican cornbread...... Yummy!!!!

    I had the same polenta this past week and ate it just heated up in the microwave with other veggies topped with balsamic glaze. Try it out with the glaze next time. You will definitely love it!

    Hi Miranda. All of these look delicious!!! One idea for the polenta is to cut it into rounds and either pan fry them or airfry them. Once they are a bit crispy make them into little pizzas by addind your pizza toppings and pop them under the broiler. You can top them with pasta sauce or baked beans. Oh and chili!!! Delicious!!!

    Polenta can be made from corn meal or also cornmeal made from corn grits Hominy.

    Polenta ideas: top with gravy, marinara/white sauce, sautéed veggies, or fried with fruit or syrup for breakfast... or a good episode of 'Will it waffle?'

    I have an emergency food storage because you never know if natural disaster strikes you can’t get to the grocery store or a enemy country attacks the power grid. So I do have a food storage for emergency use. I’ve got food that can last 20 years. I am a prepper.

    I slice my polenta and top with sauce and a bit of vegan cheese and eat like mini pizzas. I sometimes add mushrooms and green peppers on top as well.

      Great idea! I do that too hence why that list was in my pantry! I start looking at what I have when I'm making meals and make a list of what I want to use up and than write out the ideas that come from those items!!

    Great video. I love using up pantry items and also don't do alot food storage anymore other than canning what I need. I have never had cornmeal pancakes but will be soon as they look delicious.     Delicious-looking meals! Don't forget to check your beans for stones. I used to think it was not necessary because I'd never found one but I think it depends on the brand. I bought some mayocoba beans (delicious btw) from a different brand than the ones I'm used to and there were like 5 pebbles in there!

    Great inspiration! All those recipes look very tasty :) I have some frozen strawberries I wanted to use up and I'm getting tired of smoothies haha, so I think I'll make some pancakes with homemade fruit syrup!! Thank you for the great ideas and recipes

    Great video! I've always wanted to try making my own ketchup but have never done so. Also, those cornbread pancakes look delicious! I have lots of odds and ends to use up in my pantry now, including an opened bag of cornmeal. You've just given me an idea!

    I’ve had a version of the cornbread pancakes. Mine are thicker & we call them corn fritters. They are delicious. I love cornmeal gravy too which southerners call sawmill gravy. I have all the ingredients for that soup plus I have some cabbage that needs to be used.😍

      I always thought fritters had veggies -- I grew up in the tippy top north I know nothing about southern food but yummmmmmmmm! Okay I just made a cabbage recipe YESTERDAY that’ll be in a video Saturday! So you might need to get more fair warning!

    We keep a fully stocked working pantry and have some long term food storage, but always did before the end of 2019/start of 2020 when the pandemic hit. But this is also something I grew up having, at least a basic pantry, and once I had my son I wanted to make sure we always have several months of basics on hand, that way when things got tight, we always had something to eat. Loved the ideas you shared with us!
    Quick question, I'm curious to know why you don't use much, if any oil at all when you're cooking? I can understand not using it from a gastric issue standpoint.

      When I first went plant based I came across the starch solution! I had never really used oil in my cooking because I think veggies cooked in oil is very heavy but when I went PB and saw the reasons why many don’t use it I just continued!! I eat oils in foods if it’s in it, but not to cook with at all anymore

    I store beans in 1.5c portions since that is what a can normally has. Then when a recipe calls for 1 can I don’t have to measure it out.

    I have kept my brown sugar in the refrigerator for several decades. It stays soft in the refrigerator.

      @@flourishingmiranda I was gifted a "brown sugar disc" from Pampered Chef and I think it's just a disc made of terracotta. I haven't tried it yet, but the review on it are good.

    Also the fact that you have to add caveats about serving size/cost of food is ridiculous. One would think people would realize every situation/person is different and to just take what works for them and add to it. We eat meat in my house. I don't say your ideas don't work for me. I take your ideas and add meat if I want. Other times, I make as is. And if you get a bell pepper for 79 cents, I don't get upset. I buy my 99 cent one and still make an affordable meal.

      Oh Leslie -- if everyone was like you I’d be happy as a clam!!! You didn’t know it was my fault grocery prices vary and gas prices are going up?! 🤣🤣 of course that’s a joke you know that but incase a troll rolls by --
      I think it’s so important people listen to their bodies so they’re eating enough!! Sometimes getting someone to click on a video or for RUclips to recommend it I have to put a $$$ amount and some people really do think it’s bible - what I said is $1.50 or less and if I’m wrong they let me know!!
      Once I shared a week for eats from Whole Foods for $25 per the title. But my total cost was like $25.87 and this one lady sent me an email to tell me how misleading I am 🤣🤣🤣🤣 people really get hung up on the wrong things when I’m just trying to help! The world can always use a little more love
