He's pulling a bend on the G string at the 7th fret and then releasing it (a pull-off) so it rings open. Hear that G note? It's a very cool trick and dead easy to do. Go grab your guitar and try it! Hitting the guitar with the picking hand has nothing to do with it...that is simply a little bit of "magician misdirection" to make you think it's part of the technique.
