Hi Theresa, yes you can freeze them, either before or after they're baked. Just put them on a parchment lined baking sheet in the freezer, in one layer for about 2-3 hours or until solid, and then you can remove them and store them in a Ziplock bag or container, also in one layer. Add a sheet of parchment paper on top if you want to stack them. You will also have to cook them for longer if baking from frozen.

Yes you should be able to assemble them for a few hours, possibly up to overnight in the refrigerator before drizzling them with olive oil and popping them in the oven. To play it safe, you can at least hollow out the mushrooms and make your filling before adding the breadcrumbs, egg, and cheese overnight in the fridge and then finish up the steps the next day.
I have never tried that, but I'm a little worried about their texture after being frozen. If you do that, you'd probably have to at least thaw them overnight in the fridge before re-heating.
Unless you went to a butcher, the ground pork I've seen in regular grocery stores doesn't have enough fat in it to make sausage. All you would have is ground pork with some seasonings.

When you make fresh sausage, you incorporate chunks of fat with the meat, along with the spices and fresh herbs, and grind it together before extruding into the casings. Ground pork and seasonings would not have the same taste. And also the purpose of my channel is to make cooking inviting, accessible, and fun for all levels.
