一般海綿蛋糕都是全蛋下盆去打發。而老師是先打發蛋白,再加入蛋黃混合。請問老師,可以用您的方法,以及等量增加材料,製作海綿蛋糕嗎?

剛剛要開始做海綿蛋糕。我忘了問您,蛋白要打發到什麼程度,才混入蛋黃??我再看了幾次您的視頻,是濕性偏乾的中性嗎?懇請老師幫我確認一下,謝謝老師。

1. 蛋白打过度,过硬,膨胀的时候不够软 所以裂了。2. 又或者您使用的温度 太高 蛋糕膨胀速度过快 导致裂开。
老师,你好,请问你是用firenzzi 烤炉吗?我才买了一台,但是烤chiffon cake, 上面和旁边都好像烤不香。。我用150度上下火40分钟,180度10分钟,请问有问题吗?谢谢
