My wife spent her summers in the Abaco’s. She always talked about their coconut bread. So I did some digging and found your video here. It looked pretty close to the loaves we would buy there. So I surprised her with it this morning.
She said it was excellent and very close to the original recipe she would have. Thank you for posting this.

My grandma would never called that a coconut bread. I spent many a days " barking" dry coconut and grating them. So we could have coconut bread that almost had more flakes than flour ,you could literally pick some flakes out. This looks like something you learn in school.
Not the best classroom for authentic Bahamian food...Why are all if our traditional food being so called modernize? ...I'm only a crab catcher from Andros , what I know about the culinary arts 🤷🏽‍♂️
Btw you cute, you aight,,. Peace

I never advertised my Bahamian dishes as being “authentic” they are for people like me who may live in other parts of the world and would like to experience and enjoy Bahamian inspired dishes using what they have available to them. Thanks for watching :)

That is coconut flour you're using right to make coconut bread
