The chicharron and guacamole trend works best when the chicharron is more fresh and tender. I’ve had it with hard chicharron and it was ok. But I had chicharron that was freshly made with fresh guacamole and it was insane.

Northgate is like the Hmart for latinos, good stuff but expensive. Try visiting a Superior Grocery, its a Hispanic grocery with more realistic prices and fun fact the founder is Korean!
Remember to cure the pottery before the sing to cook guys. They make great pot s to cook in i love the pit for beans and rice to bake rice in rhe oven!❤
The chicharron they have there isn’t good. If u go to la Reyna in Anaheim specifically in Anaheim on Saturday morning @10 -11 am they have fresh chicharron coming out . Make sure it’s the one that is just coming out That’s the top meaty chicharron we’ve had . That’s the kind where u can dip in guacamole and enjoy. Super yummy 😋
I love the Mercado. Sadly, this video misses out on so much of what makes it such a great place. I think you have to understand the culture better to fully appreciate the Mercado. I had my reservations almost from the beginning when he called the tortilleria a "taco factory" and the meat counter is a carniceria. I couldn't believe when the video breezed by all the beautiful dried chiles in bulk without a second look then bought prepackaged chiles. The puestos make the Mercado make you feel like you're in a market in Mexico -- some of them are even legendary there -- and deserve a much closer look. I highly recommend visiting the Mercado to anyone in the vicinity of Costa Mesa to really appreciate it.
