OLD SCHOOL BEEF STEW

  • This is a hearty filling recipe to enjoy on a cold rainy fall or winter night
    3 teaspoons kosher salt, plus more for seasoning
    1 teaspoon freshly ground black pepper, plus more for seasoning
    1 (3-pound) boneless chuck roast
    3 tablespoons vegetable oil
    1 medium yellow onion, large dice
    2 tablespoons tomato paste
    4 cups (1 quart) low-sodium beef broth
    3 medium carrots
    2 tsp chopped garlic
    3 medium celery stalks(optional)
    4 medium Yukon Gold potatoes (about 1 1/2 pounds)
    1 cup frozen peas
    1 cup frozen green beans
    1 cup frozen corn
    Trim the roast of excess fat and grizzle and cut it into 1- to 1-1/2-inch cubes. Place the meat in pan and season well and set aside.
    Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium heat until shimmering. take about one-third of the meat and add it to the pot. Cook, stirring rarely, until browned all over, about 4 to 5 minutes. Remove to a large bowl. Repeat with the remaining meat in 2 more batches; set aside.(do not over crowd the pot when searing the meat)
    Add the onion and carrots and garlic to the pot and season with salt and pepper. Cook, stirring occasionally, until softened and just starting to brown, about 5 minutes. Add the tomato paste, stir to coat the onion, and carrots and cook until the raw flavor has cooked off, about 1 to 2 minutes.
    Pour in the beef stock, scrape up any browned bits from the bottom of the pot, and cook until the mixture has thickened, about 3 minutes.
    Return the meat and any accumulated juices in the bowl to the pot. Add pearl onions and stir to combine. Increase the heat to high and bring to a boil. Immediately reduce the heat to low and simmer uncovered for 1 hour.
    potatoes into large dice and add them to the pot (peel and potatoes first, if desired). Stir to combine, cover with a tight fitting lid, and simmer, stirring occasionally, until the vegetables and meat are knife tender, about 1 hour and add green beans,peas and corn
    and simmer uncovered until warmed through, about 5 minutes. Taste and season with salt and pepper as needed.
    Serve with white rice and cornbread

    I'm making a similar stew tomorrow for my husband, it's his late mother's recipe. The only thing different is her's includes cabbage and corn. You are the first person that I've ever seen that makes Beef stew with so many different veggies, besides my husband's mom.

      The cabbage sounds good, will have to try it next time. Corn sounds good too. You can put whatever you want in it thats what is great about stew. My aunt use to call hers clean out the fridge stew. Stay safe.

    Made this yesterday to prepare for the winter storm and it was perfect. Meat was tender and the vegetables tender but not mushy. I thickened mine by dredging the meat in flour before browning it similar to your beef tips and gravy recipe. I have some fresh green beans so I used some of those instead and added them with the potatoes. Your yeast rolls were great too soft and fluffy. Thank you so much for your recipes.

    dang you are rolling out the videos. I just made beef stew a few days ago. perfect for this kind of weather. I also add a packet of Knorr Brown Gravy mix to thicken my stew up and add a little more beef flavor.

    Chef, you made me laugh! You were talking about how thick and hearty the stew was and I was sitting here thinking that the only thing missing was a nice big pan of cornbread! It wasn't 10 seconds later that you pulled that beautiful pan of cornbread out of the oven! You read my mind and I couldn't help but laugh!

    I gotta tell off on myself when I first tried to make beef stew many years ago. I wanted to put Pearl onions in the stew but I couldn’t find them in the store so I was looking around and I found a big jar in the pickle section. I put those pickled onions in my stew and it the most awful mess you can imagine!! That know it all cousin of mine never lets me forget it🤣. I do remember my Mother saving all the grease especially bacon grease. Now that is old school there. She would put bacon grease over the tops of biscuits before she baked them. Things are different now bc people don’t seem to know these things. I have CHF so I can’t eat bacon anymore. Very low sodium for me. That stew looks fantastic. You made me think about the vegetables bc I’m bad about just tossing them all in together. Thank you for your cooking advice Chef! 👍

    It's almost Christmas in '21 now and you have made what I have tried and tried to make----Old Fashioned Beef Stew (the way my grandmother and mom used to make and I never could). I think I need me a trip to the market for some ingredients and I'm making my lonesome a batch of your stew. Thanks for a recipe that brings back many a warm memory.

    Here in South Dakota the winter has been mild so far. That means we haven't had those sub-zero highs with -50° wind chill factors days. But it been cold enough for a pot of beef stew. Last Thursday, it was cold & damp & the wife made a pot filling the 6qt dutch oven she used, thinking we'd have plenty of leftovers. Our daughter & granddaughter decided to eat with us. We had 1 serving left. Our base recipe is almost identical to yours. Other things get tossed in from time to time.

    Our family has a similar recipe going back several generations, but a cook gotta put his own spin on it, so mine's a bit more time-consuming than Mom's (which was always my favorite). There's an ongoing debate on whether it's "soup" or "srew," and we don't add thickeners, but it's always gonna be "stew" in my house.
    The main diferrence between mine and yours (and my Mom's!) is that i make a beefy beef stock, with neck bones or shanks or short ribs, then stew my chuck separately in that stock. I cook my veggies in store-bought beef stock, also separately, then i assemble it all at the end, and let it simmer awhile to marry all the flavors. It takes more time, but Mmm mmm. Also i cook barley in boxed beef stock, and toss that in at the end, then serve with warm buttered cornbread.

    Very good! I use a pressure cooker for the meat (2 hrs), after browning meat with onions, garlic, and bell pepper.
