You need to use the correct tools for different materials. Make an axe to cut trees, make a pickaxe to mine stone and other mining material, make a shovel to dig up dirt sand, and lastly, make a hoe to start a farm
As a previous comment said, armadillo. Armadillos will roll up when you sprint near them, attack them, or if an undead mob is nearby. Every so often they will peek their head out and stick it back in, and if the danger is gone, it will unroll. Undead mobs consist of zombies, skeletons, etc.
I always found it annoying with console edition and bedrock with controllers that they have a separate button in the UI for your inventory and crafting(they do the exact same thing, just label one button as inventory/crafting, or just inventory, we'll figure it out once we're in the inventory), and then you have to right click the crafting table to access it. It causes confusion, it's very bad UI.

please, stop using random things for stone, there is a pickaxes for a reason
If you dont have a bed yet, you can dig a hole anywhere and wait for the night to end.
