I am Italian (I mean was born,grew up and live in Italy), and the real carbonara is just call for pasta, eggs, pancetta, persil, pepper, salt and Parmigiano. No need for heavy cream or milk or butter to make it creamy, if you know how to cook it right!

Boy, we italian cringe, when we hear of a carbonara with cream! It's just eggs people! , in fact only the reds, mixed with pecorino cheese, conserve some of the water where you cook you pasta, add fried pancetta and stir like crazy... You will get the healtgy cream!
