I've always assumed they added those bright blue parts to make the TIE Fighter look more "fun and toyetic" as opposed to having it be all grey and dull compared to the more colorful X-Wing and Y-Wing. Same thing with the Sith Infiltrator, that one also had bright blue parts to break up the overall dark grey look.
The blue always looked better to me, even if it wasn’t screen accurate. It makes me very nostalgic looking at them, and reminds me of the old LEGO Star Wars games. A friend of mine and I built one together by looking for the parts in his big bin of old LEGO pieces. When we finished it, he let me keep it as a gift for high school graduation. I also have the 2009 TIE Advanced. It was one of my first ever Star Wars sets.
This is actually Vader's tie fighter because it has the tie bomber's wings. It also came with an Y fighter in the same set. Amazing to see this relic, it was the first set I got. Wow I feel old.
I thought the old blue looked nice, it felt more like a toy than a model kit. In the same way, the old grey X-Wing felt more like classic Lego space and I liked that implied lineage

While the solid blue is nowhere near accurate, I do have a soft spot for it thanks to The Complete Saga.
Gotta say sand blue really looks great and I forgot about that scene they based it. Alas I somehow very much like the blue tie fighter
And people complain about accuracy in modern sets.
I have all the blue variants including the tie crawler and tie d, they are all really neat and look nice together
