The plane continued to climb due to the momentum it already had being enough for the wings to generate lift. But with the weight distribution being off and no way to control the pitch or trim, the wings continue to generate lift until it's pitched up too far and stalls, then as it dives it gains speed so the cycle repeats at less and less altitude until it finally crashes. Behavior like that has been documented from planes that suffered similar damage in flight...I imagine not much fun for the passengers, or for the Alfa in this case.

This Plane Behaviour is called Pumping (If it translates from german into english that way) and starts when the Center of Gravity is way to much to the Back of the Plane. The entire Nose was cut off, so the Pumping started. Happened to an Easy Star (small RC Airplane) from a Friend. He forgot to secure the Battery in Place, so as he made a Looping it slipped all the way to the Back. It was so hillarious to watch i fell over laughing. He managed to "Land" it of course without Damage...
