I think after the first sear you already nailed it. In person i would have finished them above hot charcoal. But this personal. I think the ammount of liquid that stayed in the sear plate cooled it of just to much? Great video again cheers.

I surprised you didn't taste the butter because everything is better with butter! I have never done a twice sear of anything. Mayo would not be my first choice of binder, but the Truffe oil is a great choice that I have used myself.
In terms of appearance, I really like how it looks like 2 different types of crust from both sears.
It really was 2 different crusts. I wish I had dry brined it - it might have been perfect!

What happens? It probably gets overcooked
After you cut them in the steaks, why not seared them then twice doesn’t make sense to me
That really didn't look like the type of sear that you've gotten in the past. It looked lighter and not as crusty. Seasoning the faces might help.I would eat that all day though!!!!!
I was in a steakplace in Thailand where they went from steak on the fire in to the oven about 4 to 5 times. Was quite and experience as I sat at the bar basically alone in the restaurant, 3 ladies behind me just standing there. The head chef and about 3 cooks behind him watching. But I've never seen a steak cooked like that. short bouts of fire combined with oven. Was really good!

Uuuhm, Meater and Traeger is the same company right? Why use them separately?
Great question! The MEATER app has functionality the Traeger app doesn’t have (history graphs for example) - so I use the MEATER products in their pure form.
