In regards to the peppers Tim to answer your question, that white squishy part of the pepper is the placenta where all of the heat comes from. The seeds are only spicy because they are coated in capsaicin so animals won't eat them and they can grow in the ground to produce another pepper.

If you use Meijer Lemons, you don't need to add any oranges & it tastes a lot better. They can be grown in cold climates on sun porches. My four kids & I moved from SoCal to MI to take care of my folks when my Dad got cancer & that was the ONE THING they asked for, lol. Those last three years with their Granddad, going through his old Army photo albums & him going out for drives with us CANNOT be replaced with ANYTHING! *Thanks for ALL YOU DO!* (PS. The cold water causes the capsaicin and other saturated fatty compounds to separate from the water and appear above it as the white milky substance. Also drinking water doesn’t help with pepper based foods because the polar water will spread the capsaicin around your mouth more making it worse. Milk is very fatty and nonpolar and since like dissolves like this will “wash” the capsaicin away. Also great video! I need to try this recipe!

You only take a chef's knife handling class when you use a chef's knife. Those are all fighting knives that he's already taken the classes for. Kinda like using a Gerber to remove a nail from a dude's back in the Middle East.
Here in Peru, we only use lemon juice, but the kind of lemon that grows here is super strong, way more acid than the lemon available in other countries. We also use a lot of ingredients hard to come by in other countries, like Limo chile (aji limo). That kind of chili is like a nuke compared to the regular chile. Traditional Peruvian ceviche recipe is more straight forward but I will try yours definitely.

Try pinching your chef knife at just above the handle with forefinger and thumb. This will give you greater control of knife when dicing vegetables. Other hand on the onion like tiger claw kung fu ...keeps the fingers safe...AWESOME VIDEO
what would your version of margarita rice be. i make my family diced chicken with red and black beans with sweet corn and red chilis seedless with diced tomatoes and onion with cumin pepper and a little salt a top steamed white rice.
