The production of milk and honey are two foods which do not require the death of the source.
Not the point.
So long as this is done ethically following the weaning of the calves / kids … sadly factory farming from my understanding rips the mama and babies apart often right after birth which does not lend to the land of milk & honey partly described in Isa 11:6-9 where “The wolf also shall dwell with the lamb, and the leopard shall lie down with the kid; and the calf and the young lion”.

In the Greek Mythology Zeus was feed with milk from the goat Amalthé and the bees were bringing him Honey. The goat giving her milk would represent a source which never stop providing, to thanks the goat it has been place in the stars as the constelation capricornus.
I would represent land of milk and honey would represent a land of abondance, a land that never stops giving, a land that regenerate itself. where no labor is needed, where the torns and thistles are not taking over the valleys.

You definitely got the old covenant physical meaning correct. As you know, many things in scripture have a spiritual meaning in the New covenant. So many things in scripture that are physical in nature have spiritual meanings now. For instance, Jesus is the rock, Jesus is a cornerstone, Jesus is a vine, Jesus is a tree, Jesus is a root, Jesus is a well, Jesus is the light, Jesus is the sun, the word is a lamp, Judah is a grapevine, the Northern kingdom of Israel was a fig tree, together they were addressed as an olive tree, rain is the pouring out of the spirit, the sea is a people, Islands are nations...I could go on and on....
Milk and honey are also words that have deeper spiritual meaning that is not physical. In the new testament we are plainly told that milk is basic teachings that many can never move on from because they cannot even properly consume the milk, but meat is only for those that are ready to move on and grow spiritually. You can even see this in the old Testament. On the festival of Shavuot (Pentecost in Greek) the Jews make Cream puffs and cheesecake and other milk based treats to celebrate the giving of the ten commandments. They are still celebrating the "milk" (old covenant) and cannot move on to the meat.
So milk and honey have to do with abundance when speaking of a land that Israel would possess, but all things in the OT are physical but come to represent the SPIRITUAL in the NEW covenant. So we should not be looking for abundance of physical nourishment and worldly goods in the New covenant. We should be applying the spiritual context of all of those things in the new covenant. Milk is words, basics like the moral application of the law. Honey is the divine provision of God. This is why both Ezekiel and Paul were given a vision of God's future provision to bring calamity on the evil of the world and blessings and provision to the people who trust in the Lord. In both cases, even though so much of what was to come sounded so sad and devastating for the world, and yet when they wrote it down and ate the scroll, it tasted like honey. We are to strive beyond the physical meaning of milk and honey in the New covenant. (And God told Isaiah twice that he would his son to BE the New covenant to his people). If we are IN Jesus, we are IN the New covenant so we are not trying to gain the physical, we are striving toward the wisdom and knowledge of the Lord.
But here are some verses about milk and honey that will help explain:
Hebrews 5:12-13
For when for the time ye ought to be teachers, ye have need that one teach you again which [be] the first principles of the oracles of God; and are become such as have need of milk, and not of strong meat. For every one that useth milk [is] unskilful in the word of righteousness: for he is a babe.
1 COrinthians 3:2
I fed you with milk, not solid food, for you were not ready for it. And even now you are not yet ready,
1 pETER 2:2
As newborn babes, desire the sincere milk of the word, that ye may grow thereby..
Revelation 10:9-10
So I went to the angel and asked him to give me the little scroll. He said to me, “Take it and eat it. It will turn your stomach sour, but ‘in your mouth it will be as sweet as honey.’ ”
10 I took the little scroll from the angel’s hand and ate it. It tasted as sweet as honey in my mouth, but when I had eaten it, my stomach turned sour.
Isaiah 28:9
Whom shall he teach knowledge? and whom shall he make to understand doctrine? [them that are] weaned from the milk, [and] drawn from the breasts.
Isaiah 16:11
That ye may suck, and be satisfied with the breasts of her (Zion) consolations; that ye may milk out, and be delighted with the abundance of her glory.
Isaiah 60:16

Simply put: Milk=birth & Honey=growth. Why? Genesis 1:29 God said unto them, be FRUITFUL and MULTIPLY. Milk=multiplication & Honey=Fruitfulness. Milk is only available when there is a new born; milk comes from godly pleasure (sex with your wife) and worker bees help to pollinate our food; fruitfulness comes from work.

Yes milk is god according to God and to be received with thanksgiving. It is your choice what food you consume, God is concerned with the inner person.
"Milk and honey" is a metaphor for goodness, plenty and wholeness
