Well its more of preference some jedi like ashoka adopt two sabers others take up double bladed sabers while most common is just a single saber. While sith have the options between weapons the Jedi were meant to be keepers of the peace and having dual sabers or double blade could be seen as a more threatening stance but sense the Jedi lost their way it's just more on preference in the old Republic but clone Wars was more on being seen as peace keepers. Could be wrong but this is what I think

if jedi and sith fight so much better with 2 lightsabers why dont they just carry 2?
It’s an individual thing
Not every Jedi or Sith is able to fight with 2 lightsaber or a staffblade it also depends on the opponent
And in my opinion, I think they only carry one instead of 2 is because there more used to using 1 so they go back to using 1 instead of 2
