    My mom used to make mashed potato candy. She added coconut to the dough, rolled it into balls and dipped into melted chocolate chips. It was delicious.

    I was raised by my grandparents, and I spent a lotta time watching my Nanny cooking and baking!..I’d always get a chuckle when she’d do a recipe using potatoes or eggs, because she’d always say, “Can you believe the same hot water that makes your potatoes soft, makes your eggs hard!?!…lol..
    I learned so much from her!..And dear Lord I miss her and my Da more and more each day!..Especially around Christmas time!..

    Oh my gosh. My mother passed 1 week ago at 84 and as a little boy this potato candy was around the house a lot. I absolutely loved it. Man what memories.

      I'm so sorry for your loss. I just lost my mama at 84 too, and I know we have a life time of memories until we see them again!! I wish my mama had of made more sweets!! She did make snow ice-cream, and it was so good!! She put sugar,milk, and vanilla flavoring and mixed it together!! It just didn't snow that much in Alabama!!😃

    I’m 58 now and our Dutch Amish family have never had a Christmas with/out Potato Candy and Pickled Red Beets and Eggs…
    I remember my Auntie using left-over mashed potatoes…she never made them from a fresh potato…not sure if that matters but man, those things were gr8! Unfortunately family gatherings have dwindled and haven’t had this candy since early 20ish years….i am making some this year! This is the year for ending with FAVORABLE MEMORIES OF YEARS PAST! 😊❤🙏🇺🇸🙏😉☺️❤️

      I've now done both fresh and leftovers, and there's no difference once they're cooled. I've never had pickled beets, but I love pickled eggs. I think potato candy would be a great ending to the year 😊❤️

      Yes! My mom used to save leftover mashed potatoes for this. We also eat pickled beets and eggs! I made some last week. I’ve never known any other family know about them, so to see your post just tickled me pink! I’m 60. I’m of German (mothers side) and Norwegian (fathers side) descent but we cook along the lines of Amish and Southern it seems. My mother would make all kinds of candy for Christmas. I miss her food.

      I would think you could dice the apples up, or use an apple filling.

    One Christmas, I cooked a Russet potato, drained it well, mashed it, and added chopped Maraschino cherries, well drained, and chopped pecans, butter, and powdered sugar, and followed the rest like you just did. Then I made balls and rolled in powdered sugar to finish. Once I tried, instead of Russet potatoes, a yam and followed the recipe that you used but made balls and rolled in powdered sugar. NOTE: when you add cherries, it takes a lot more powdered sugar because they don't drain super well unless you use paper towels to finish drying them. I have also used extra crunchy peanut butter for the peanut butter rounds.

    I've been making these candies for a few years (not as much as your recipe calls for though) but I don't add peanut butter. When the potato and icing sugar are well blended, I add mint extract to the mix, roll out bite size balls and dip in melted chocolate. Family loves them.

      Love it with the PB .. my IGA deli sells it … but granny also made it with cinnamon and brown sugar, or any preserve she had on hand as a filling when she rolled it

    I grew up eating potato candy! My grandma used to make it, mostly around Christmas time but would occasionally make it throughout the year. It is very rich but oh so good! So many people have never heard of potato candy and they think it sounds gross when you mention it but little do they know how delicious it is.
    If you use dental floss or thread to slice your candy the pieces will stay round, just like cutting homemade cinnamon rolls.

    My mother made potato candy, she also added along with vanilla she would add hazel nut. Sometimes if she not have hazel nut, she would add just a touch of mint. Sometimes she would add other flavors such as peppermint, cherry, orange, or pumpkin. Enjoy it.

    During wwii rationing these were an alternative to marzipan, and usually made from a leftover boiled potato from dinner mashed with powdered sugar added until the consistency is right and often plavoured with peppermint or almond extract

    I too was raised on this candy... every Christmas my mom would make it and we would stand in line to get the ends. Pointers I taught myself... I roll it out on parchment paper dusted with confectioner sugar to keep it from sticking... wrap it in the parchment then plastic wrap tightly to form my roll and then put it in the fridge to set up before slicing it. These steps really make a difference in the presentation. Thanks for sharing the memories.

    I love the story and the step by step is perfect for someone who has never made this before. Including the why we do this and that is perfect. This is a great teaching video for someone who may not be very skilled in the kitchen. Especially with no Home Ec anymore and many families don't do home cooking from scratch or baking from scratch any longer ❤

    My dad used to make peanut butter and coconut Easter eggs using a potato base like this. Then he would dip them in chocolate. So good!

    I can remember my mom making mashed potato candy. However, she would use mint flavors, tinted with food colors, roll them into balls, roll in powdered sugar, and then flattened into discs. Sounds a little odd, but these mint discs were delicious. I haven't thought of them in years. Now i think I'll make some.

    I live next to Idaho in Washington and I didn’t learn about candy made from potatoes until about 9 years ago when I watched an old video on Idaho. I’m 60 years old now. Idaho makes ice cream and chocolates from potatoes, along with other kinds of candy. I live very close to Post Falls and Coeur d’Alene Idaho, and every since I saw the various deserts made from potatoes I wanted to go there and check them out. I have no excuse not to.😁 After watching this video I’m tempted to make the candy.

    Seeing this now, grandma used to make this with dried cherries, apricots or apples, depended on the fruit harvest, would add nuts and coconut at Christmas. Also made at Easter. New sub., will try this

    OMGOSH 😋 dip those in chocolate almond bark!!!! My mom made mounds bars like that when I was a kid. Potato mashed and powdered sugar and coconut. Form them however you wish and dip them in chocolate almond bark! So yummy! Homemade mounds bars!

    The sound of that pressure cooker goin makes my heart so very happy. I literally listened to the peanut butter part three or four times just to hear it(it was actually when you were cutting the first roll up). I haven't heard it since inwas a kid and my mawmaw was always using her pressure cooker🥰thanks for that memory and for the recipe!! I've never had potato candy but thanks to you, my grantaters are gonna have it this weekend!!

      Stop by my house, mine’s going right now with homemade turkey stock from the leftover turkey carcass I was gifted (we had ham this year). Darn thing was a huge carcass, i had to cut in in 1/4ths to fit in IP. I think I’m getting 12 quarts out of it. 😂

    My grandmother use to add peppermint extract to the mash potatos and she made peppermint pattys and the dipped them in chocolate it tasted just like a new york peppermint patty they were so good

      My grandma had mint plants in her garden. Chocolate mint , pepper mint, teas made from mint plant. Sorta like dry basil but mint. All the wonderful treats from mint plant. Icing

      I think it's so cool when there is candy, or anything food related that has a different name in different places. I actually just put out a video two days ago, that shows off the different ways I made Needums, and some were dipped in chocolate 😊❤️

    Hi,my way is quicker if you would like to try it. Wash unpeeled potato,put in microwave for 5 minutes. Carefully peel the hot skin off. Mash potatoes while there hot, and start adding confectioners sugar until it gets to the texture to roll it out. Add peanut butter Carefully roll it up, and chill it for about 30 minutes are a hour. Take it out and slice it,then it's ready to eat. I don't have to worry about the temperature in my kitchen unless I make homemade fudge. I hope you like it!!😊

    My mom used to add peppermint extract and food colouring. She made a ball and flattened it with a fork. They were so good. I made them years ago and my kids liked them too. Now I think I’ll try them for grandkids.

    Would suggest putting rolled log in frig before slicing. That’s what my Mom would do. I never liked it but my oldest sister does.

    I remember making potato candy with my grandmother and mother when I was a kid and lately I was thinking of making some for Christmas. It’s been about 40 years since I made some. Such a simple recipe to make and so delicious to eat.

    My great grandmother used to make potato mint candies. They were rolled out and cut out about the size of a quarter. She probably used the center of a donut cutter. The pink ones were flavored spearmint and the green were wintergreen. If anyone has a recipe for them please let me know.

      My mom did this too the pink was peppermint and green spearmint. Or sometime leave them plain and put some extra butter when you roll them out for butter mints with the mint of your choice.

    I’ve eaten these with almond butter, almond extract, and half way dipped in dark chocolate. I had never had them before that, but I did love them. Oh and they weren’t totally round either.

    I had this as a kid also; but we just used left-over mashed potatoes, then enough powdered sugar so you could roll it out then peanut butter, made them at Scout Camp for Campfire nights. ❤

    Oh my word, this is a blast from the past! I remember Momma making these at Christmas and I loved them. I don’t remember vanilla being added and she put a much thinner coat of PB and I wonder if that made them easier to roll up? Thank you so much for this wonderful reminder!

    I make potato candy quite often, and I have to say never seen someone put butter in it, however it does make me want to try it, makes sense that you would add butter. I usually just use potato and powdered sugar and then the peanut butter ( and of course you can use something else if you would like, I have tried it with Nutella or even half and half like one side Nutella and the other side peanut butter, I have even done one side peanut butter and one side marshmallow fluff ) and when you say yours are egg shaped and not perfectly round I was thinking "they look perfect" because I don't think I have ever seen potato candy that was round xD it has always turned out looking like a giant Abba-Zabba ( the candy bar, not sure if they are even sold still ) but one thing about potato candy is its really hard to REALLY mess them up, like if it is still to watery and you have added a lot of powdered sugar, just take out half of the watery potato mixture out of the bowl and start adding more sugar to that and it does firm up eventually. Also this is something I do, I noticed you started rolling the candy with your dough mat ( I have that same mat :3 ) I was thinking of telling you that you should place down a parchment paper on the mat first then put the candy on that and then roll it out, then when you spread the filling you can use the parchment paper to roll it and for the most part it doesn't stick to the paper, also after you roll it into a "log" I would recommend wrapping it with a sheet of parchment paper then putting it in the fridge for at least a couple hours, then take it out unwrap it and then cut it into the pieces. OH!! also you CAN make this with instant mash too if you wanted to, just mix the potato flakes with could water then proceed with that mash with your candy. Any ways, great video!       Thank you so much for all the wonderful information, I think the butter in the recipe does add flavor and some stiffness to the candy but I think it's to represent people who butter their mashed potatoes and use the leftovers, but it does add a nice flavor and texture to the candy. My dad used to make it for us when we were kids and I don't remember him ever putting butter in it either, I made a bunch of it this year to try all the different ones that were in the comments. The parchment paper trick is really smart. I hope you, and yours have the best of holidays 😊❤️

    We made it with a small boiled white potato, evap milk, confectioners sugar, a tiny bit of salt, vanilla. Cook potato in water until done. Peel. Use a fork and mash potato onto a large flat platter. Add sifted confectioners sugar, mashing into potato, then a tiny bit of milk. Keep adding both alternately until you get a slightly moist consistency that can be rolled and will hold together in a ball shape. Add about a pinch of salt, abt a capful of vanilla ( cap on vanilla bottle), mix in. Keep a knife handy to pinch off bits to taste as you mix to fine tune the taste. We would divide the mixture into bowls to mix in coloring or can keep it all white. After rolling it into balls, can roll in coconut, or chopped nuts or both, or keep it plain. Store in layers of waxed paper in a tightly sealed container. Keeps for several days in the fridge. Need to let it come to room temp to eat.

    Here's a quicker way of cooking potatoes, if you have a tea kettle, boil water while you're prepping the potato(s), then add to your pot and it'll take half the cooking time. Instead of using a lid, (prevent boil over), place a wooden spoon over the top, works way better.

      Potatoes cooked from cold water turn out better 👍. Anything grown above ground cook in hot water (CORN!) anything below ground start in cold.

    I grew up enjoying potato card over the Christmas holidays. Our potato candy was just a mashed potato, confectionery sugar, and peanut. I have made it myself numerous times over the Christmas holiday. Everyone loves it.

    A friend of mine makes or at least used to a mashed potato snowball. I think it was basically a similar potato recipe, shaped into little balls rolled in melted chocolate and then shredded or grated unsweetened coconut.

    I used cold leftover from dinner mashed potatoes that obviously had two much moisture still in it to maintain stiffness that allows you to roll it out. Since my leftover potatoes had butter already in it, I did not add butter as in his recipe. I like the idea of adding flavoring and making balls to dip in chocolate. THANKS for sharing. .

    Russet potatoes have a higher starch content. This helps the candies stay together when you make the potato dough

    You can also just use corn starch and water that cuts back on mold growth and you can. Store this candy for months

    Oh my gosh! I have never had these but after seeing this, I have all kinds of ideas brewing in my head to use the potato dough.
    I am one of those people that sees one person's idea (recipe) and it inspires me to do my own thing.
    But as you were rolling these, cinnamon kept going through my mind. Now, I am wondering about making a pan of Faux Cinnamon Rolls with it. Lol

    I put my cubed up potato in a bowl, allow to cool NEVER refrigerate it. I place 2 cups of powder sugar in the bowl & place potato in the sugar, knead together into a ball, add 1tsp vanilla. Roll out on 1tbs of powder sugar, in about 1/4 thin, spread Peanut Butter all over thinly. Roll up in log shape, place in refrigerator for 1 hour before slicing.. This is a sweet desert

    This was very helpful. I made some potato candy a few days ago and they didn't turn out quite right. Now that you mentioned the heat in your kitchen from canning, my issue was likely the heat coming from my dishwasher because it the only wide enough space I have and I wanted to finish the candy before my husband had to leave for work. So, when I make again this weekend I'm definitely going to make sure that has not been running.

    My family made this very often when I was growing up usually in the fall or Christmas. Love it! Another candy we would make is vinegar candy! It was a hard candy made with vinegar and sugar only that I remember, we would pull it like taffy! And twist it! It was fabulous! I don’t remember the exact recipe!

    In addition to working the dough as cold as possible, cutting rounds is easily done (with such soft material) with thread looped around each section and tightened, cutting from perimeter to center.
