  • Echpochmak is a traditional Tatar dish, which is a triangular pie stuffed with meat, potatoes and onions. Here's how to make juicy homemade echpochmak according to your recipe.
    Ingredients:
    For the dough:
    Kefir - 200 g
    Chicken egg - 1
    Melt butter - 100 g
    A pinch of sugar
    A pinch of salt
    Flour - 400 g
    For the filling:
    Beef - 400 g
    Butter - 100 g
    Onions - 1 pcs.
    Potatoes - 1 pc.
    Garlic - 1-2 cloves
    Salt, pepper - to taste
    Instructions:
    Preparing the dough:
    In a large bowl, mix kefir, egg, melted butter, sugar and salt.
    Gradually add flour, kneading a soft, elastic dough. If the dough sticks to your hands, add a little more flour.
    Cover the dough with a towel and leave in a warm place for 30 minutes.
    Preparing the filling:
    Cut the beef into small cubes. (You can use minced meat)
    Peel and cut the onion into thin half rings.
    Peel and cut the potatoes and garlic into small cubes.
    Mix the beef, onion, potatoes and garlic in a bowl. Add salt and pepper to taste. Finally, add finely chopped butter and mix everything well.
    Forming the echpochmak:
    Divide the dough into equal parts and roll each piece into a circle about 0.5 cm thick.
    Put 1-2 tablespoons of filling in the center of each circle.
    Fold the edges of the dough to the center to form a triangle. Leave a small opening at the top for steam to escape.
    Brush the tops with egg yolk so that they shine.
    Baking:
    Preheat the oven to 180 °C (350 °F).
    Place the echpochmak on a baking sheet lined with parchment paper.
    Bake for 30 minutes until golden brown.
    Serving:
    The finished echpochmak can be served hot or cold.
    They go well with tea or any other drink.
