  • On this episode of How to Drink, I’m taking a look at how to make the perfect Dark and Stormy cocktail. Fun fact, Gosling’s enforces a claim they hold over the copyright of the drink, and requires it to be made with their rum. Which I don’t do here, so however you like to make your Dark and Stormy, I encourage you to do so. Hope you enjoy, cheers!
    Dark and Stormy Ingredients:
    - .5oz or 15 ml Lime Juice
    - 1.5oz or 45 ml Ginger Syrup
    - 2oz or 60ml Rum
    - Quick Shake
    - Top with Setzler
    - Garnish with Mint

    That “heat” is called “piquancy.” Anything giving a sensation of heat is considered “piquant,” whereas “spice” relates to flavor. Great episode!

      Piquancy is just a sharp or pronounced flavor or savoriness. It's a synonym with tang in English. For example, the OED uses this as their example sentence: These tomatoes have an intense flavor of great piquancy.

    Funny enough, a local brewery had a beer they called "Dark and Stormy Night" which has since been named "Cease and Desist" for obvious reasons haha...

    One the best dark and stormies I ever had was in Beijing where the bar had a vat of dark rum filled with ginger. They would only serve the rum after the ginger had pickled in it for over 2 weeks. It was a very good bar.

    A Dark n stormy with Gosling is actually delicious - but its very silly to try to trademark it. Its like trademarking Chocolate milk.

      I agree, nothing wrong with Goslings at all in the D&S. I just kinda bristle at the copyright issue.

    I've made a Dark and Stormy with Zaya rum before. Zaya has vanilla notes that add a nice twist to rum cocktails. It also makes a rum and Coke taste like a vanilla Coke, which I enjoyed a lot.

    Call me crazy, but I kinda miss these short-form videos. They're succinct, yet still entertaining.
    You could conceivably fire off a bunch of these, then take a vacation and we'd be none the wiser.

    Been tinkering with this one while:
    Juice of ½ a lime. About ½ oz
    ½ oz passion fruit syrup
    1 oz Hamilton 151
    1 oz Wray and Nephew white overproof
    1 dash Angostura bitters
    Shake with crushed ice.
    Dirty dump into Collins glass.
    Top with Reed’s extra ginger beer

    Oh yes! I use the exact same overproof rum in my dark n stormies* with Fever tree ginger beer. It’s also my Friday airline lounge special, as I can usually find all the right ingredients. Love this drink.

    You can make a really nice version with fresh ginger thats just muddled with some sirup in the shaker. Then shaken with rum and strained into the glass and topped with selzer. Super fresh taste :)

    The best ginger beer I have found is Hollows & Fentimans Ginger Beer 4%, not too sweet, actually fermented, nice kick of ginger, no artificial flavouring. I also found that Goslings rum really doesn't go well with coke but is perfect in a Dark and Stormy, it really needs a strong tasting rum like Gosling or navy proof because the ginger beer will otherwise make it completely disappear.

    From what I understand, Gosling only has the trademark on specifically "Dark 'N Stormy." As long as you're not calling it specifically that, it's fine. Apparently to get around this (and I admit I only found this as I was writing this comment to make sure I wasn't wrong about anything) the International Bartender's association calls it a "Dark 'N' Stormy." Though just calling it a "Dark and Stormy" seems to be what most people do.

    I appreciate the Magnum PI shirt. When I was in New York I had a “Dark and Extra Stormy” Ever since Ive had it I top mine off with Crystalized Ginger ive never added lime to mine. I usually use Sailor Jerry’s

    This has been my new favorite easy cocktail. I like the seltzer idea, but tbh, I've just been using more rum.☺️

    Fever Tree Ginger beer is great for a Dark and Stormy, packs a real nice heat. And top it with a dash or two of Ango.

    I like using Reed's stronger ginger brew and Myers's rum, sometimes with a float of Smith and Cross. If you had a bar and wanted to serve that drink and didn't want Gosling's to come after you, you could call it Jamaican Me Crazy

    Morgenthaler has a super easy and awesome Ginger Beer recipe that I like to use if I have the time. Otherwise I tend to use Fever Tree because you simply cannot go wrong there. Keen to try out your recipe and make a few penicillins along the way.

    My rum of choice for DnS is Cruzan Black Strap. It has a dark molasses sweetness that blends with ginger and lime juice.

    Best Dark n Stormy I ever had was in Annapolis, MD (a Sailor’s town with a drinking problem) at Pusser’s Caribbean Grill though that’s not their claim to fame. You can’t beat their Painkillers....I could go for a Level 3 right now!

      I like the overproof here. Goslings makes an overproof as well that when I'm feeling copyright friendly I prefer to use.

    It's inclement, not inclimate.
    Great drink. Good for international speak like a pirate day - September 18th.
    I like to use Stone's Green Ginger Wine as the sweetness/ginger factor although I will try the ginger syrup.
    The addition of a dark rum along with the over-proof rum adds a nice layer of complexity to the drink.
    Awesome channel. I recommend this channel to all my friends and none have been disappointed. Keep it up.

    I make mine with Angostura 7 yr rum and Fentimans ginger beer. It's one of the spicier ginger beers I've found and it has a really good flavor. Once I get around to making some ginger syrup I'll have to give this a try though!

    How do you feel about a dash or two of Angostura bitters in your Black & Inclimate weather? I've tried it and found it adds a nice layer of complexity

      We do that in my bar, muddled lime wedges, Ice, rum, gingerbeer, then topped with the angostura, and a short stir, all in that order. Perfect like that

    I much prefer the layered versions because it has a nice "storm cloud" visual presentation and gives you drinking options. You can mix it up with the straw and drink it as presented here, or you can let the drink's flavor evolve as you drink it. So you can sip it from the top and enjoy the intense rum experience that gradually gives way to the ginger heat. Or you can reverse the order by drinking through a straw. If you don't make your own potent ginger beer, I think the best commercial ginger beer for this is the cheap and available Goya brand. It gives the best heat, but I understand it contains other ingredients in addition to ginger.

    The Dark&Stormy recipe I know calls for spiced rum (I like Kraken) a dash of hot sauce, juice of 1/4 lime and specifically for Jamaican ginger beer.

    Easily one of my top five all-time favorite drinks. Wonderful! I completely agree that the layering is not actually necessary, I prefer everything incorporated myself. As a side note, I adore the rename. "Bleak and Inclimate Weather" although not as easy to say is much more fun to say, AND is something I feel Jack Sparrow would mutter on his ship while mixing a rum drink.

    My dad always gets so disappointed when a bartender doesn't float the rum! Complains it's not *really* a Dark and Stormy without the raincloud lol, he's not a big drinker so the presentation is a big part of the fun for him

    I use a local (or my own) alcoholic ginger beer. Squeeze of lime in the glass first, fill with GB and float a couple of ounces of spiced rum on top. Call it a pirate or turbo Jerry's (whatever your heart desires). Mint and GB is spot on so go ahead and leave that mint sprig in the glass.

    Just in case this hasn't come up already, wikipedia says: "Gosling Brothers has registered a version of the name that uses one apostrophe ('N), while the International Bartenders Association uses two apostrophes ('N'). In the United States, "Dark 'n Stormy" has been a registered trademark of Gosling Brothers Ltd of Bermuda since 1991."

    I believe that technically the trademark is on "Dark 'N Stormy" specifically so as long as you don't call it that you should be sailing under clear skies. Though like the other guy said, making it with goslings rum and ginger beer does make for a tasty drink.

    The DaS is one of the very best drinks out there, if you ask me. I myself prefer to subsitute the overproof rum for Bacardi Black Spiced Rum, which makes it even more delicious and changes the name to "Black Storm". If you like this drink here, try out a Black Storm :)

    Gosling's Black Seal is tasty rum, but if you can find it, and I doubt many of you can, Young's Old Sam Rum is the absolute BEST demerera rum out there! Makes excellent D&S'

    I've had house ginger syrup before, I'll probably end up trying yours, but at this stage I prefer a nice dry spicy ginger beer like Fever Tree or Capi

    i disapprove of the spillage with this dark and stormy :D also try making a daiquiri with 50/50 ginger syrup, muscovado sugar for the sweeter side and the usual lime and rum. And to that eat some slighty pan roasted peanuts, after u take a sip of the drink you kinda get a fortified taste of the roasted peanuts

    Do you need to use dark rum, or does a light rum work just fine? I'm just getting a home bar started, and the only bottle of rum I have is an aged light rum (although, aged only one year. It's a bottle of Cruzan.)

    Had a date mid September and he offered to mix me a dark & stormy ... never heard of it before, quite liked the drink and the guy :D Now I found Your episode. The only thing that bugs me is the trademark though.

    I like it but i still think ill be making it with some ice gingerbeer layer on some dark rum but i may swap the dark rum out with a nice over proof

    I call it a "Dim & Inclement" when it's not built with Gosling's. Great beverage, can't go wrong with good, strong ginger beer, but I'll have to try some of that ginger syrup.
