One the best dark and stormies I ever had was in Beijing where the bar had a vat of dark rum filled with ginger. They would only serve the rum after the ginger had pickled in it for over 2 weeks. It was a very good bar.
I've made a Dark and Stormy with Zaya rum before. Zaya has vanilla notes that add a nice twist to rum cocktails. It also makes a rum and Coke taste like a vanilla Coke, which I enjoyed a lot.
Been tinkering with this one while: Juice of ½ a lime. About ½ oz ½ oz passion fruit syrup 1 oz Hamilton 151 1 oz Wray and Nephew white overproof 1 dash Angostura bitters Shake with crushed ice. Dirty dump into Collins glass. Top with Reed’s extra ginger beer

The best ginger beer I have found is Hollows & Fentimans Ginger Beer 4%, not too sweet, actually fermented, nice kick of ginger, no artificial flavouring. I also found that Goslings rum really doesn't go well with coke but is perfect in a Dark and Stormy, it really needs a strong tasting rum like Gosling or navy proof because the ginger beer will otherwise make it completely disappear.
Oh yes! I use the exact same overproof rum in my dark n stormies* with Fever tree ginger beer. It’s also my Friday airline lounge special, as I can usually find all the right ingredients. Love this drink.
You can make a really nice version with fresh ginger thats just muddled with some sirup in the shaker. Then shaken with rum and strained into the glass and topped with selzer. Super fresh taste :)

From what I understand, Gosling only has the trademark on specifically "Dark 'N Stormy." As long as you're not calling it specifically that, it's fine. Apparently to get around this (and I admit I only found this as I was writing this comment to make sure I wasn't wrong about anything) the International Bartender's association calls it a "Dark 'N' Stormy." Though just calling it a "Dark and Stormy" seems to be what most people do.
I like using Reed's stronger ginger brew and Myers's rum, sometimes with a float of Smith and Cross. If you had a bar and wanted to serve that drink and didn't want Gosling's to come after you, you could call it Jamaican Me Crazy

Morgenthaler has a super easy and awesome Ginger Beer recipe that I like to use if I have the time. Otherwise I tend to use Fever Tree because you simply cannot go wrong there. Keen to try out your recipe and make a few penicillins along the way.

Wow. I just made myself one with my home made syrup. This is now my favourite drink😃 I did a little experiment in a small glass. I poured a bit of the finished cocktail in and splashed some Angostura on top. Interesting how it mellowed down the ginger.

It's inclement, not inclimate. Great drink. Good for international speak like a pirate day - September 18th. I like to use Stone's Green Ginger Wine as the sweetness/ginger factor although I will try the ginger syrup. The addition of a dark rum along with the over-proof rum adds a nice layer of complexity to the drink. Awesome channel. I recommend this channel to all my friends and none have been disappointed. Keep it up.
I much prefer the layered versions because it has a nice "storm cloud" visual presentation and gives you drinking options. You can mix it up with the straw and drink it as presented here, or you can let the drink's flavor evolve as you drink it. So you can sip it from the top and enjoy the intense rum experience that gradually gives way to the ginger heat. Or you can reverse the order by drinking through a straw. If you don't make your own potent ginger beer, I think the best commercial ginger beer for this is the cheap and available Goya brand. It gives the best heat, but I understand it contains other ingredients in addition to ginger.
I make mine with Angostura 7 yr rum and Fentimans ginger beer. It's one of the spicier ginger beers I've found and it has a really good flavor. Once I get around to making some ginger syrup I'll have to give this a try though!
Best Dark n Stormy I ever had was in Annapolis, MD (a Sailor’s town with a drinking problem) at Pusser’s Caribbean Grill though that’s not their claim to fame. You can’t beat their Painkillers....I could go for a Level 3 right now!

Made this for my bar today, but with Havana Club 7 instead, and have never gotten so many compliments on a cocktail! (Made a little extra syrup to take home too ;) )
Gosling's Black Seal is tasty rum, but if you can find it, and I doubt many of you can, Young's Old Sam Rum is the absolute BEST demerera rum out there! Makes excellent D&S'

I believe that technically the trademark is on "Dark 'N Stormy" specifically so as long as you don't call it that you should be sailing under clear skies. Though like the other guy said, making it with goslings rum and ginger beer does make for a tasty drink.
The DaS is one of the very best drinks out there, if you ask me. I myself prefer to subsitute the overproof rum for Bacardi Black Spiced Rum, which makes it even more delicious and changes the name to "Black Storm". If you like this drink here, try out a Black Storm :)

That “heat” is called “piquancy.” Anything giving a sensation of heat is considered “piquant,” whereas “spice” relates to flavor. Great episode!

The Dark&Stormy recipe I know calls for spiced rum (I like Kraken) a dash of hot sauce, juice of 1/4 lime and specifically for Jamaican ginger beer.
This looks way better than my Dad’s shot of Kraken spiced rum and a bottle of alcoholic ginger beer recipe
