This is behind the counter of a local family owned Japanese Teishoku " Set Meal" restaurant called Shokudo Morikawa. Nestled within walking distance from Tokyo University, the oldest university in Japan, it’s been a staple nourishment for students for more than 120 years. The shop originally started selling bento boxes on the University campus distributing them with a carrying pole aka milkmaid’s yoke, and later grew into a Teishoku restaurant meaning it serves Japanese set meals, where all of the dishes in the course are served together often consisting of a main dish, rice, soup and sides. Today, the shop serves not only Japanese school students food, but also locals and salarymen alike all lining up to enjoy their delectable and affordable set meals. Oh Paolo, I went to this restaurant frequently when I was university student, it was almost 30 years ago! This was called "Mori-shoku" among students and was VERY popular at that time also. I'm living in Kobe now so your video brings back memories of my good old days. Thank you so much!

Welcome to Kobe. I don't eat out now so my information is limited unfortunately. But I know "Yo-shoku Asahi" is popular Mori-shoku-like restaurant. Yakiniku (Japanese style beef grill) restaurant "Mangetsu" is also popular. I know these because I use to live in Hanakuma area. I hope you enjoy your life in kobe. @henby_

@@aznantboi correct, traditionally this is the only way. Because in Japan traditionally only men can inherit the family business, if you have only daughters then you do what's called mukuyoshi (adopting a son in law).

Paolo casually dropping words like "No cap" and "aight bet" just catches me off-guard every time, I love it!
It also stands out for me, but I think it sounds out of place and contrived. Maybe he's trying to appeal to a younger audience? I don't think Paolo is much younger than me if at all, so it seems weird because my peers don't use gen Z slang but their kids might.

One thing that I learnt from your video and the people on the video is that YOU SHOULD LOVE YOUR JOB. Every job is tiring but if you love it, you enjoy it, the job will be not that hard, the job will be fun. The appreciation comes from others but if we are grateful for that appreciation, we will work even more to maintain our legacy. Thank you for this video, Paolo. I was a chef for 14 years. I think i sat with my chef and co workers maybe once or twice in all those years for a meal. Its so crazy to see kitchen culture in Japan and how different it is from here. Breaks my heart to see his business not being taken over by the next generation as it has propspered for so long. If i knew the language id drop everything to help that man. Just got back from a week in Tokyo and Kyoto. It's amazing how easy it is to eat delicious and healthy meals so inexpensively there! No matter where we went we'd find fantastic meals and it rarely cost more than 5-10k Yen to feed the 4 of us, even with drinks
i worked in restaurants state side for 20 years, recently left the whole industry... it's so refreshing to see people love their workers, and their workers love them! it's such a hard job, and small joys make it that much easier! thank you for your videos!

Just got back from my first trip to Japan and it is amazing how many local food shops are everywhere. It is crazy how much easier and more affordable it is to eat healthy in Japan compared to North America.
Also, was pretty excited when I went to Tsukiji Fish Market to get myself a bottle of Paolos Premium Kaminari Hot Sauce. Tastes really good and has a good amount of heat. Kind of funny that the hot sauce was the one thing I wanted to really take home from the trip.

I live far from Japan (I'm in Central Europe) but in a sense, this place reminds me of the cafeteria at my late mother's workplace where I'd sometimes go eat lunch with the vouches she gave me.

I LOVE how well they treat their employees in Japan's restaurants ! The fact that they feed them daily for FREE is incredibly generous !! MOST restaurants in North America will charge a fee for meals with a slight discount and place multiple conditions in what you can and can't order. This is especially true in chain restaurants.
The restaurants should feed its own peopleat while at work. It doesn't make sense to be in food business with hungry people running eat.
