If dough don't raise because of hot water
I am confused about the conversion table. Is that meant only for using with liquid? If adding to dry mix, do I simply use the amount called for in the recipe?

I've been using SAF Red for a few years and it is great! As soon as I open a new package, I empty it into two canning jars; a smaller one that I use on a regular basis, and a larger one for the remaining yeast. I keep them both in the freezer and refill the smaller jar from the larger one. Be sure to return the smaller jar to the freezer as quickly as possible so that you don't get condensation in the jar. I have had excellent results with SAF Red that had been opened 2 1/2 years previously. I just got my first package of SAF Gold and I'm looking forward to using it in my enriched doughs.

Can I use the lesaffre gold yeast for donut? It's an emergency?

I have the Saf-instant Red, I haven't baked much for a few years, and now using up the last of a package , manufacturing date 06/2013 ! The yeast was kept in the fridge all this time, some in the freezer, some in a sealed jar. I baked two loafs with this old yeast yesterday, the yeast still works. I have ordered some fresh yeast now.

Is this yeast ideal in high sugar formulations (e.g. 5% to 25%)? Also, what if the dough needs to do a 1st rise before shaping - what would the process be?

Hi Jim and Lasaffre team- I have the premium high power yeast but you didn't talk about how to use use it and what type of bread to use it for. I haven't come across any review on the internet or you tube. I tried using it on a pizza dough recipe but it took a long time to rise. I am an experienced home baker and bake bread everyday. Thanks.
