So i have a few questions as i have to start doing this as part of a job: 1. Is the technique maintained with a particular way the knife is held, as well as the size and shape? 2. How do you keep the melon handled so well on a wet board?
1.The better way to have a good grip is to pinch the blade with your thumb and index, it makes all the difference because now you don't hold a knife anymore, the knife become an extension of the hand so you can work like this for hours. 2.Don't focus on the melon, it holds itself because of the weight, plus you cut a base, the board is textured, so is the melon 3.Just trust yourself, the more you cut , the more you improve

Hi! There is not really any trick, the thing is to use a sharp knife to avoid tearing the cells of the onion, which makes the gas release more quickly!

Yes, you are totally right. In general, red onions are stronger but interesting because of the color and the sweetness too. Perfect for salads!
