Thanks, we always buy Chuck Roll here from Friboi Brazil, but it's always a crap shoot on how it looks when we get it. Sometimes it's hacked off and hard to determine the cuts but mostly very lean with connective tissue without much in the way of fat

The first cut off your Chuck should be your chuck eye steaks after the chuck eye steaks you should cut one chuck roast then you start cutting your steaks at the end another Roast
