Cauliflower Parmesan Soup
I love this Soup.
Its so comforting. All you need are just a few ingredients and a little time and you have a wonderful satisfying soup.
Ingredients:
1 large Cauliflower
1 cup heavy cream---more or less
2 cups chicken broth
1/2 cup grated Parmesan cheese-- more less
salt pepper to taste
1/2 cup chopped scallions, green onion, chives
1 cp chopped celery
1 drizzle olive oil
1 tbs salted butter
1 tbs minced garlic
1 tsp corn starch
1 tbs salted butter
In a soup pot, melt your butter, olive oil, add onion, celery and saute' until soft, add chopped cauliflower, add chicken broth, and to a boil. Add salt pepper to taste. Continue to simmer at a high medium for 15 minutes.

This is so easy. You can make this dinner in about twenty minutes. I just grabbed a box of Parmesan Shake and Bake and tossed in some chicken thighs. I baked them at 400 degrees for 20 minutes.     Looks good! I use beef rice a roni in mine, diced tomatoes, cheddar cheese, Worcester sauce, ketchup, chopped spinach for health. Top with a whole canned tomatoe and Italian cheese. Serve with corn and sour cream. Yummy. I make enough to freeze for later dinners too

    I have been wanting to make my own Giardiniera but the recipes are mostly Chicago style (we call this chow chow or relish). I wanted to make bite-size for snacking like you made here. I too had been thinking about using the pepperoncini. Thank you for making the video, I will attempt making it I hope I get the brine correct, I don't like the sweet as much as I do sour.

    dutch oven, with a smattering of caraway & sliced green onion, 435 for two hours covered in the oven, then uncovered at 375 for 1/2 hour to congeal and coagulate the goodness. ENJOY I served with mashed potatoes that we mixed in Georgian Eggplant gratinee. TDF.

    Can I remove 1/2 cup of the vinegar and add an extra 1/2 cup of sugar? I don't want it sweet but I do want it balanced because a 4 year old will be eating these too and he loves pickles so I'm not that worried. But can I add sugar until it tastes balance to me? I don't want to give us all botulism and I am a food scientist and microbiologist so it takes quite a bit in fact this year in the United States two people died from botulism and many more than that die from slipping in their bathroom or driving their car there are a lot more dangerous things!

      The ratio is Vinegar to water is usually one to one. I add a bit more vinegar to taste for me. You can definately always add more sugar. I like to taste a sip of my brine before I add to my jars. So yeah. Why Not? Let me know how they turn out. As for the botulism thing. I think you're pretty safe. As long as you have a good ratio of water to vinegar, and your jars are sealed properly. You are good to go.

    I make these sort of like I do my dilly beans. I put a whole clove of garlic in the bottom of the pint. I have stopped on the side of the road to pick berries before but I've never looked for dill I will have to do that! :-)

    I've had these for years but they came from a company Jarred up already. They had a little bit of oil in them to carry the flavor so I might add and I have in the past added a tablespoon of olive oil. I added the oil to my short-term what I knew I would eat and say 4 or 5 months and then the ones I hadn't got to when I opened them I added a tablespoon of olive oil to the jar and ate them I love them!
