Even though Doc Holliday didn’t make a lot of good decisions later in life, he still was very smart and not dumb like Ike. I think that’s why Doc taunts Ike knowing he is not bright and asking Ike to have a spelling contest. It’s also cool that Doc used to be a dentist, still an educated man.
The Cochise County Cowboys used to hang around the Mexican border, stealing cattle from the Mexican side and then selling them in Arizona. I have heard scepticism about whether they were "organised crime" as described in this movie - but it would be hard to argue that they weren't.
Just in case anyone is wondering- calling someone a pimp back then was an insult. People who were dressed wealthily, and lived a wealthy lifestyle were called pimps- it’s as if you’re telling a person- you’re a rich motherfucker who takes advantage of, and thinks regular people are below you. It’s an insult to wealthy people, assuming they are corrupt, ignorant, and greedy. This translates into modern day pimps because they use women to get ridiculously wealthy and don’t share much of the profit- they take advantage of everyone else to get more wealthy.
It is also a bit of a nod to the real history. The Earps' weren't squeaky clean and had been involved in some sketchy stuff earlier in their lives. Wyatt was arrested in Kansas for being involved in the operation of a brothel.

People back then got a name for being infamous more-so than being famous. It’s just the Earps decided to go down doing the right thing, rather than being criminals.
Doc’s antics and behavior just shows how he is in control of the atmosphere in the saloon. Also Ike is just the typical inferior male who likes to overextend and throw around his ego as if he is the big shot of his posse when in reality he is the biggest coward dog that would tuck his tail and run if he ever felt slightly threatened to face harm or any other kind of danger. Great characters on all fronts in this movie. An absolute classic of a masterpiece Western
