All steal pits will rust.... plenty of spray cooking oil will season them right up..... I spray mine before and after all my cooks..... it takes time too just so you know... from time to time you'll see a bit of rust pop up..... just use more spray.....pretty soon it will season up nicely......

This is a fantastic cooker for the $. Yea if you got 7K burning a hole in your pocket go get a franklin. But smokers are like golf clubs....it ain't the clubs it's the player. If you slice w cheap clubs you're still gonna slice with the best. With regard to your cons, you probably live in a more humid environment which leads to your therm condensation. Usually it evaporates when you fire up. Can't explain the vent handle. Mines fine and you are the first to mention it that I've seen. Rust.....from day one you must coat any charcoal steel panted unit chargriller or otherwise...with oil inside and out....veg....canola...whatever. And it needs to be re-applied regularly. If you had done that iniitially you would have zero rust. These types of cookers require regular maintenance. If thats too much trouble than these are not for you. Backyard smoking especially offset requires time and some effort. It's not for everyone. Anyway the Grand champ has served me very well and I highly recommend it over anything at the price point.
I have the same one and i love it. It was a gift from my good old pastor and it's been an awesome smoker.

How come you didn’t run the temperature way up to high 300 to 400 to season it? This is the way I did mine and it worked really well. Just curious why you chose a lower temp. These are awesome smokers
Great video Boss. A few questions for you. 1) After I got her smoking I closed the vents not all the way just a little, and it went out. Not sure if it overheated and automatically shut off 🤨 2) Do you soak your wood chips in water? Thanks brother. PEW-PEW!!! Oh, btw, I found my smoker on the side of the road. Everything was there. Just needed a good cleaning.
@@rileycpo thanks for the kind words! I do not soak my wood in water. In my opinion, it’s unnecessary. Use your vents to help control temperature and the amount of smoke you want on your meat. The more you open the vents, the hotter and cleaner your fire will burn. More oxygen=hotter fire and cleaner smoke. Smoking is all about experimenting. Play around with your smoker. Eventually you’ll find the settings that you like! Good luck, have fun, and keep me posted! 💨 🔥🤙

Bought mine at Home Depot, on clearance sale w/military discount it was $270! Added Lavalock thermometers (one left, one right), added stack extension, and baffle w/water pan, and tuning plates. Saw rust immediately, and quickly got worse, see photos! I do keep it covered but it’s Oregon. Painted it (twice) with ultra high temp paint (2000 degree rating), prepped with wire brush, still rusts! Best thing to do is treat it like your weapon, keep a light coat of oil on it after smokes! I love mine for the value & money! I will not paint it again. Drive it until she is dead. Well worth the value. Love the two shelves, front shelf….thrilled with my purchase! My smokes have been brilliant.
I guess I can’t post photos…but with a coat of oil she’s like new

I just received my Grand Champion for Christmas 😅. It will be a week or two until it's assembled. I have a couple of friends who are going to put it together for me. Mean while I'm watching videos and learning what I can. Your videos are well done and has given me a lot of useful information.

I’m going to say maybe the rainstorm caused all that. The gauge for sure. And the rust maybe?? Gauge will probably evacuate itself give it a month.

It’s was a great balance of smoke flavor in the meat, and savory flavor in the vegetables. The only thing I’ll do different next time is add a little tomato paste to the broth. Otherwise is was great.

I've been tempted to try this myself. It's my understanding that oxtails absolutely need to be braised, because smoking them just isn't enough. Great job, brother!
Thanks buddy. They definitely have to be braised after smoking them. I was probing them with a fork in the braising broth. Once there’s no resistance, they’re super tender!

Like mine a lot. A little more than "entry level" but not high end by any means. Fireboxes get hot and will rust and requires on going attention. Keep up with it. (Not unexpected.) The best thing they could do with this is to replace the cheep spindles and wheels with a through both legs bigger diameter axle and harbor freight nematic tire wheels. This would be a huge upgrade worth a little more $ IMO. Get the extra thermometers for the corners and a ash raker to remove excess ash on long smokes. The XD makes this easy to do with the full sized fire box door but they ash rake should come with IMO. Also, make a proper fit winter thermo blankie available to keep temps cozy in cold weather.
I like mine but find high fuel consumption. During long cooks, I am adding small splits or charcoal every 30 minutes, to maintain 250-275. Stick burners require a lot of attention, I get that, but this one keeps me busy. Still, for the $, you can’t beat it!

What was the highest IT that you brought them to? I just did some boneless beef ribs that I brought up to just over 200° IT, and they were just a tad on the tough side, even after a good rest.
These were super tender and juicy just over 200. I wrapped them with a little beef tallow to help keep them moist. It worked great.

I do them like brisket, 203-208, but only rest them about an hour. With ribs, even beef, just go by feel on how they bend unless its a plate.
