With 60+ offset I needed 25mm to clear perfectly.

You can machine the caliper bolt mount and trim off 5mm and should work perfectly fine, should be cheaper as well than buying the spacer.

It's probably smart to wear long sleeve moisture-wicking shirts and long rugged pants tucked into boots, depending on where you're doing the traveling. A belt would feel uncomfortable on a long tour, so maybe elastic waist on the pants is better or just no belt. (Branches can snag on your clothes etc). You also need a good fitting helmet, gloves, goggles to protect your eyes if you're traveling a dusty trail like in a desert. I would assume that you're very likely to get dirty since there's no doors or windows to protect you, and you're going over natural terrain. Closed-toe shoes, too. Definitely don't wear a nice outfit!
