I’m not Italian, and I know it’s not traditional carbonara, but I like to put lots of sliced onions and fry with the ham. It reduces down to a sauce and makes it beautifully sweet and salty at the same time.
How are all the sauté ingredients just on the counter should be on ice atleast ideally a chill station def some other safety issues also this is not very busy.

Recipe more or less respected ... I would not have removed the bacon fat, that's where the fun is! Then the pasta should not be drained with a sieve but thrown directly into the pan and seasoned in the same ... not separately otherwise it will cool much faster ... and the plates should be heated for the same reason. Goddammit this POV shot makes me feel nauseous!
Ricetta grossomodo rispettata … io non avrei tolto il grasso del guanciale, è li che sta la goduria! Poi la pasta non va scolata col settaccio ma buttata direttamente in padella e condita nella stessa … non a parte sennò si rafredda molto prima ..e i piatti vanno scaldati per lo stesso motivo. E questa ripresa POV mi fa venire la nausea!

Not a real chef…didn’t do the double click on the tongs to ensure they work properly.
Was just appreciating learning from the technique in this. Dry roasting pepper corn and then blitzing with an immersion blender? Would have never thought of that. No need for a spice grinder or mortar and pestle. Those forceps like tonges are nice, very multi-purpose. Also appreciate seeing exactly in what order the sauce comes together, first the yolks and parmesian, then tempered with a bit of pasta water, then tempered again with a bit of oil from the parma, then the parma itself, and then finally the pasta (which clears the fond from the ham pan before going into the sauce). I expect the whites and the leftover oil went to some other cooking task. Thanks!

In the case that u have to do a carbonara do you use a different pot to boil the pasta? or you use the same boiler? because you need that boilling water to do the dish, the food looks amazing, good job, grettings from Argentina.
He can spoon water out of the pasta boiler - he does it a number of times throughout the video. With the amount of pasta cooked in the same water, that stuff is liquid gold
I mean this in a good way. This is BUSY? Wtf is wrong with the places Ive worked at? My last job as a line cook I had to use all 8 burners on the stove simultaneously to try to keep up. Im guessing this is just what a well thought out menu and good front of house looks like.
