Lancaster County School District Career Center’s ProStart culinary team trained since October for this challenging annual South Carolina state competition. They devised the menu, costed it out and presented it under the stress of competition. Four chefs, one manager, two gas burners and no running water. 3 courses in one hour!

Black Bean Brownies Recipe

1 (15.5 ounce) can black beans, rinsed and drained 3 tablespoons vegetable oil ¼ cup cocoa powder 2 teaspoon vanilla extract ¾ cup white sugar 3 eggs 1 pinch salt ½ cup chopped walnuts (optional) 1 teaspoon instant coffee (Optional) ½ cup milk chocolate chips (Optional) Dusting of powdered sugar (optional) Bake at 350 Fahrenheit for 20-25 minutes in an 8x8 baking pan.
