ingredients: yellow onion package of bacon 6 medium sized potatoes 2 tbsp minced garlic 2 tbsp flour 2 tbsp butter 4 cups chicken broth 2 cups half and half 3/4 cups sour cream 2 cups cheddar cheese salt pepper chives Peel and dice potatoes, boil until tender. Drain and set aside. Cut bacon into bite sized pieces and brown, remove and drain most of the grease. Dice up yellow onion and add to the remaining bacon grease and sauté. Once onions are soft, add butter and melt. Sprinkle flour on top and mix. Slowly add in chicken broth and whisk to dissolve any flour. Slowly add in half and half, and bring to a low boil. Lightly mash potatoes keeping chunks/bumps, and add liquid to the soup pot with potatoes. Add in sour cream, salt, pepper, chives, cheddar cheese and bacon. Mix to combine on low heat and melt cheese. Serve and top with more cheese and chives. Enjoy!! 🫶🏼
