Does anyone have an idea to make this fish taste like halibut

what if you don't have a steamer?
Walmart sells a cheap steamer thing that's kind of a pain but it works. I think mine was like $3 but I haven't used it forever so idk how to use it well. You could use a frying pan that's covered with something to keep the crab off the pan? Maybe like one of those little stands some air fryers come with or something? Hell even wrap it up in tin foil loosely with some bunched at the bottom to elevate it a bit. I don't eat seafood much because I'm the only one out of my wife and kids who will actually eat it so I don't have many tips, just saw you asked 3 weeks ago and nobody responded so figured I'd try to help a bit.

the biggest problem cooking this fish..notice she did not actually cook any in the video.. is the flesh tends to fall appart .. on the grill(barbecue) or skillet.. for example on the grill the best way to cook it is in a trout cage or BBQ Grill Basket that keeps it together(watchout for flareup it really is oily).. on the skillet, do not flip it too much, do not worry about it burning .. it is extremely oily. As for taste.. it is very mild, not strong fishy at all.. salt, peper, limon juice.. good to go.

Yes, Sitka sends spectacularly scrumptious seafood! I really like the flavors of all the kinds of fishes, and don't like them salted. Plus, when they're plain I can share with my cats, and have a sauce or topping on the side if I want. I don't mind dealing with the albumin ("fish-white"!). Do you ever squeeze fish such as cod after thawed to get out excess water?

What are the contaminant levels in rockfish?
Are these the ones that are already prepped or did ya prep em yourself
I came away still not understanding how to treat the different varieties to bring out what makes them unique. It sounds like keta is the one to go to for pan frying and sockeye is best for gravlax. It would be helpful to also know what *not* to do with certain types. Are some better in a pan than in the oven or grilled? Are some more worth bringing out for fancier dinners or special occasions? I've enjoyed being a Sitka member for a while, but the blurring of varieties continues to be a challenge (including on the white fish side).
Keta is also sometimes called dog salmon or chum salmon because the flavor is just not as good. In some areas, particularly in the past, these were caught in large quantities to feed dogs over the winter. It is often hard to find in stores because no one wants it. It is and ok fish if you can find it, and could be used for a run of the mill day because it will be cheaper. You will want to add a marinade as well as lemon and salt to improve flavor. Because it is pale compared to the others, I find it does not make as good a presentation on the plate. Sockeye has great flavor but is thinner. I find that this makes it easier to grill or fry as it cooks evenly. It also has a brighter red which I find makes it visually appealing on the plate. King and coho are typically seen as the 'premium' fish. I personally prefer the coho (also known as silvers). Both are great for baking or poaching, but also make a great grill or pan fry. These fillets have more shape to them so you might want to cut them into steaks, strips or cubes for more even cooking. Or you could leave them as she did to get a less cooked inner with that melt in your mouth feel. I personally prefer firmer so I avoid this. The kings are larger fish than the coho and will generally be a bit more expensive per pound. As far as bringing out the flavor. They are all very similar. Salt, lemon and oil are all you really need. You can add things like dill, pepper as well. The trick is in finding how much to use. For kita you may want to go less as it has less flavor and risks being overpowered, or you may prefer to go more as the flavor it does have is not as good. For king you may want to do less and let it stand on its own flavor, or you may want to do more as it has quite a bit on its own and is less likely to be overpowered. There are also a vast array of marinade recipes which can help with paring. For example, a soy marinade can help with an asian inspired noodle paring.
