Btw maybe you said but how long between cutting into the log at home and the first time you oil the piece? Do we have a certain time frame we need to finish our project?

What tree is that?

Before oiling you should clean the surface with water and let it dry. This will make the wood fibers soak water and make it less smooth. Then you can sand it away with your finest sandpaper you use before oiling and then oil it. The oiling result will be much smoother. If you won't do the water+sand trick, this fiber grittiness will come anyway, but after oiling. Which is particularly bad if you oil only once. If you do oil more than once, then the reached result can be the same, but the water trick will save you time, effort, oil and extra oiling step.
