Uuk, you should always double or triple wash your chicken, scrubbing the skin to remove scum, and checking for hair, etc.!! There was chicken blood and water in that bag, you nasty!
Lots of variables on that question, including how often you fry, what you fry, breading used and type of fryer. For my wings in the Cajun Fryer with no breading the oil lasts at least a year. The smell test always works on frying oil. If the oil smells clean prior to frying it probably is.
The glaze is a hit with everyone. I haven’t smoked before frying. Would be difficult to not overcook. I suppose if I didn’t glaze them at all I would smoke until done and not fry at all.
Hi Jon. I didn’t recognize who you are. I have never smoked wings because I fry wings while smoker is doing meats. However, I can do more wings quicker while frying and the flavor is always liked. The glaze is the key!
Is it common to wash chickens in the USA? Its not something I've seen in Europe.
It is not advised to wash the chicken because of the risk of salmonella cross contamination.

Hi. There is a regulator on the hose leading to the burner. It is not exact but when oil temperature is getting high, close the regulator some.
Grease looks old and black time to change that oil.. chicken will taste 100% better..nice kitchen though
