How to Can Butter with a Pressure Canner and a Water Bath Canner
In this video, I am going to show you how I can butter using a water bath canner and also a pressure canner.
I melt the butter in a large pot. Once it is melted I place it in hot jars, put on hot lids, and place them in the WB canner and/or the Pressure Canner. I have used both methods with success. When the time is up I remove the jars and place them on a towel. I let them cool down a little, grab a towel (they are still hot), and start shaking the jars. I continue to shake the jars up until the jars are completely cool. The butter should be solid, not liquid. You have to shake and shake for a while.     THIS IS NOT A SAFE PRACTICE. Commercial canning is done at a much higher temp and for longer duration. That is why commercial canning of dairy products is safe and home canning, even pressure canning is not safe! At the lower home temp, botulism hides in the fat molecules and can survive the process. YOU DO THIS AT YOUR OWN RISK.

      Botulism spores are found in dirt and grow in an environment that does not have oxygen - hence canning. Butter is not grown in dirt, nor is meat. And store-bought butter has already been processed. You will not get botulism from butter or milk products. If it spoils (highly unlikely) it will show mold or have an off smell. Botulism doesn't have a moldy look or smell. If we understand what we are dealing with and how things work, we can make safe decisions. The Amish and people from other countries do not use pressure canners and they have lived to share their stories for generations.

    Good Job, right to the point, not too much babbling or getting off topic, could hear them speaking loudly and can understand what they're trying to say. The lady did ok too! LOL. Nice job, I'm getting one soon, I do a lot of venison in jars, it 's sooooo good but my small pressure canner/cooker only holds 3 quarts at a time and that's why im getting this one fom amazon.

    Beautiful video. I like how you said that people use different timing. I have noticed it and was confused. I just do mine for 8 minutes in the water bath anyway because they are cooking AS the water heats up to start my timing anyway. Don't want mine mushy.

    I have the same pressure cooker- presto 23 quart. I only use 3 quarts of water when canning my green beans? I’m so use to water bath canning jams and stuff, where you have to COVER the jars in water.

    Did 10 jars and they are not as mushy as pressure canned but no way are they solid enough to fry. Still mush.

    thanks for the video. Interesting, USDA says it's not safe to can, but it comes in a can and is sold on shelf at room temperature, not in the refrigerated section next to other dairy products:)
