Thanks for the class guys. Dish came out amazing!
Thank you for joining, see you next 😍
My husband and I visited from Hawaii in 2019 and took class with Michele. So fun! My 8 year old is an aspiring chef and woke up on his own at 5am to prep ingredients and followed along without my help and did a beautiful pasta dish! Now all he talks about is moving to Italy ;) Aloha!
Thank you guys! I am very grateful to hear that 🥰
GREAT recipe…explanation…videography. Buon Natale!!
Thank you so much 🤩
Dear Chefs, My heart went into my through to see an Italian chef pretend to break the paste you scared little me
Ahaha, breaking spaghetti would break nonna’s heart! 🍝💔

@@Rushbassman70 we are burrata lovers 😍

I took a class with them in Florence and it was great. The chef was very fun (I had Simone), we got to eat the ravioli, anulotti, and pappardelle we made from scratch. It was amazing. The wine was great, and the pappardelle Bolognese was to die for. If you're visiting Florence and you have any interest in cooking, you should take a class there. It just takes a few hours, making pasta is easier than I realized with their help, and it's delicious.
😀😀
@@danielmoloney7710 Thank you so much for your kind words! This means so much to us. Please keep making pasta, and we hope to see you back in Florence soon!
I have so many ways of making Fettuccine Alfredo. how do they make it in Rome?
@@jackdorsey4850 Fettuccine Alfredo is just a marketing creation-it’s not truly a classic Italian dish. My grandmother doesn’t even know who Alfredo is!

thank you for the support 🥰
This is the only recipe I’ve seen that actually recommends using a starch (corn, potato) instead of actual flour. So many are saying that the starch doesn’t hold together as well as a flour would… is there a specific reason you opted to use starch instead of flour?
We used corn starch because it’s gluten free! Classic gnocchi recipe includes flour.
Okay! I was just curious, thanks for your response. Keep making more videos!
Thank you guys.
Thank you for supporting us :)
@pastaclassflorence thank you for sharing your knowledge and willingness to teach us
Can’t wait to try it! Just in case you’re interested-in the US calamari are sold very clean already. Usually you don’t need to do much except examine it and cut it up. In English the clear bony thing is called the “quill” and the hard mouth is the “beak.” You should definitely do TikToks and RUclips shorts!
So where is the teaching?
The dough is just eggs and flour. All you need to know is how he rolls it.
Can you re-use this salt? Or is it full of moisture? And can you use the potato peels for something else? Can you use something else to puree the potatoes than the ricer?
You can use again the salt, you can cook the potato on the same salt for 3 times. You need the potato masher in order to get rhetorical perfect silk texture.
@@pastaclassflorence Thank you!
Dear Chef, Wow, what a wonderful dish. I do have one question perhaps I missed a step was the pasta water salted?
Always salted water! The ratio is 10gr every 1 liters of water.
@@pastaclassflorence Chef thank you
Where’s Marco? We want an episode with Marco 😂
I made this pasta in class when we visited back in August. Still my favorite pasta I've ever eaten! So dang good. Keep the videos coming!!
Thanks! It’s one of our favorite too!
Can we cook them directly after making them ? Or do they need some rest ? Plus can we cook it on boilling water ? Grazie e Bravo
Yes, you can cook it only in boiling water. If you want to pan-fry it right after boiling, make sure to drain it well and pat it dry with a cloth!
@@pastaclassflorenceThanks ! Also I made those pasta al pomodoro that was fantastic

Thank you for uploading this. One thing I don't understand is the discrepancy in the amount of water used in various pasta dishes. Some recipes I see the sauce is concentrated a great length but here a relatively high moisture passata/sauce is used and then a large amount of cooking water at the end. Wouldn't this result in a watery sauce that just tastes like cheese, wine and pork fat. Where is the tomato flavor coming from?
The amount of water added to the sauce it’s needed to cook the pasta and extract to starch, creating a creamier sauce. Let make an example: Dried pasta Cooking time 10min You will cook 6/7min in the water and the rest in the pasta sauce, on high heat, adding pasta water every time needed (so a lot 😂) until cooking point. Fresh pasta. Cooking time 5min 2/3 in boiling water and the rest in the pan, since the process it’s faster you need less water. For answering the last question, no, pasta sauce it’s not get watering if you let all the pasta water evaporate. Keep cooking pasta and let us know if you tried the recipes!
Dear Chefs, That dish looks terrific. When you use the same water for the lobster and the pasta did you resalt the water for the pasta stage of cooking?
When you cook the lobster you don’t need to add any salt in the water, when you cook the pasta you need to add the salt.
@@pastaclassflorenceThank You Chefs for clarifying that.
I like what I see
beautiful!
What is the type/brand of tomato sauce?
You can buy a good San Marzano, or make you own one, check out tomato sauce video!
perfezione!
Thank you!
What's your opinion on using San marzano tomatoes for your tomato based pasta sauces? Or do you have another tomato you use for sauces?
We would suggest using San Marzano, great alternative, fresh tomato are good for this recipes only during season (and you still have to find good one). In Italy we are lucky because we have great ingredients!
@@pastaclassflorence I'm a chef and Im in love with Italian food. In the restaurant I use San Marzano for pizza sauce as well as all tomato based Italian sauces like amatriciana, pomodoro etc. The San Marzano tomatoes make everything better! Thanks for your response and I like your videos/chanel, great job guys!!!
One of my favs. Gotta try the lime zest addition
Thanks a lot!
Nice recipe.. pls make a recipe with prawns pls? Can't wait, love your cooking 🎉
We will!
I liked it very much but if add some heavy cream to the recipe and some butter would have been nicer.❤❤❤
Thanks for your feedback! 😊 Heavy cream and butter definitely add richness, but we wanted to keep it simple and true to the original recipe. Feel free to try it with your twist though - that’s the beauty of cooking! ❤🍝
This is one of my favorite dishes to eat and make I will try your version bon appetit bravo
For us too!
Nice sharing... love the yellow tomatoes idea... thanks🎉🎉🎉

Loving this video! Enjoying my tacos al pastor while watching your amazing content. Your videos are always informative and engaging! I have a request: could you please make a video explaining the difference between 00 flour and semolina flour? Specifically, I'd love to know the benefits of using water vs. egg in the dough. Also, I've noticed you only use semolina when flattening the dough - what's the reasoning behind this? Would love to learn more! Keep up the fantastic work! Saludos desde México.
Thank you, we definitely will do a video about. Have a nice one and we love tacos too!
