    My husband and I visited from Hawaii in 2019 and took class with Michele. So fun! My 8 year old is an aspiring chef and woke up on his own at 5am to prep ingredients and followed along without my help and did a beautiful pasta dish! Now all he talks about is moving to Italy ;) Aloha!

    I took a class with them in Florence and it was great. The chef was very fun (I had Simone), we got to eat the ravioli, anulotti, and pappardelle we made from scratch. It was amazing. The wine was great, and the pappardelle Bolognese was to die for. If you're visiting Florence and you have any interest in cooking, you should take a class there. It just takes a few hours, making pasta is easier than I realized with their help, and it's delicious.

    This is the only recipe I’ve seen that actually recommends using a starch (corn, potato) instead of actual flour. So many are saying that the starch doesn’t hold together as well as a flour would… is there a specific reason you opted to use starch instead of flour?

      We used corn starch because it’s gluten free! Classic gnocchi recipe includes flour.

      Can’t wait to try it! Just in case you’re interested-in the US calamari are sold very clean already. Usually you don’t need to do much except examine it and cut it up. In English the clear bony thing is called the “quill” and the hard mouth is the “beak.” You should definitely do TikToks and RUclips shorts!

    Can you re-use this salt? Or is it full of moisture? And can you use the potato peels for something else? Can you use something else to puree the potatoes than the ricer?

      You can use again the salt, you can cook the potato on the same salt for 3 times. You need the potato masher in order to get rhetorical perfect silk texture.

      Always salted water! The ratio is 10gr every 1 liters of water.

      Yes, you can cook it only in boiling water. If you want to pan-fry it right after boiling, make sure to drain it well and pat it dry with a cloth!

    Thank you for uploading this. One thing I don't understand is the discrepancy in the amount of water used in various pasta dishes. Some recipes I see the sauce is concentrated a great length but here a relatively high moisture passata/sauce is used and then a large amount of cooking water at the end. Wouldn't this result in a watery sauce that just tastes like cheese, wine and pork fat. Where is the tomato flavor coming from?

      The amount of water added to the sauce it’s needed to cook the pasta and extract to starch, creating a creamier sauce. Let make an example: Dried pasta Cooking time 10min You will cook 6/7min in the water and the rest in the pasta sauce, on high heat, adding pasta water every time needed (so a lot 😂) until cooking point. Fresh pasta. Cooking time 5min 2/3 in boiling water and the rest in the pan, since the process it’s faster you need less water. For answering the last question, no, pasta sauce it’s not get watering if you let all the pasta water evaporate. Keep cooking pasta and let us know if you tried the recipes!

    Dear Chefs, That dish looks terrific. When you use the same water for the lobster and the pasta did you resalt the water for the pasta stage of cooking?

      When you cook the lobster you don’t need to add any salt in the water, when you cook the pasta you need to add the salt.

    What's your opinion on using San marzano tomatoes for your tomato based pasta sauces? Or do you have another tomato you use for sauces?

      We would suggest using San Marzano, great alternative, fresh tomato are good for this recipes only during season (and you still have to find good one). In Italy we are lucky because we have great ingredients!

In the restaurant I use San Marzano for pizza sauce as well as all tomato based Italian sauces like amatriciana, pomodoro etc. The San Marzano tomatoes make everything better!
