Hi! My name is Monica. I live in Singapore and my sisters who share the same passion as me live in Penang, Malaysia. During the pandemic, we used to tell each other how to cook certain dishes, through WhatsApp. When we progressed to sharing more complex recipes, I decided to film the steps instead. This was how my channel "Monica's Singapore Kitchen" was born.
I cook all types of food from any country that my family loves. I have tried to simplify the steps to suit busy people trying to cook good food for their families. I also try to come up with healthy and easy spin on traditional dishes. My dishes are inspired by my sisters, friends and the many outstanding cooks from RUclips. Good afternoon, Monica. I used to make kimchi and just recently making the vegetarian archar. (no onion no garlic version ) Your method is similar to making kimchi .i was wondering if I skip the squeezing would it still be crunchy(reason being, for kimchi I just salt them cabbage and washed and drained them, it still crunchy) For my archar's cabbage I use the blanching method . Carrot I salt them and skip the washing if not too salty and squeeze them. Thanks for taking time to make this video to share with us. Your archar looks appetizing too. Hi Christine. Good afternoon! In my previous video, in which I made the traditional achar, I used only a small amount of cabbage. The other main ingredients are pineapple, cucumber, etc. I just blanched and wipe dry the cabbage as I was not worried about ending up with soggy achar. However, in this new video, "Cabbage Achar", the recipe calls for a large amount of cabbage. Therefore, it is highly recommended that we squeeze water out of the cabbage to prevent it from becoming watery and limp. Salting the cabbage draws out excess water, thus preventing the water from diluting the sambal. If you skip salting the cabbage, the salt in the sambal will leach moisture from the cabbage as it sits, making our cabbage achar watery, soggy and limp. Hope this helps. Hopefully, we can continue to share useful cooking tips!❤

Hi Sharon. This recipe can serve approximately 15 servings. Achar is a condiment which is meant to be enjoyed as a side dish over a period of time. Normally, each serving is about a cup (220ml). However, you can take as much or as little as you wish each time. ❤. Enjoy!

Wow, I am so thankful for the recipe of Nasi Lemak... this is exactly the range I ate in SG a few years back. I can now satisfy my cravings, though the curry leaves may prove difficult to obtain. Never tried eating this wrapped in banana leaf but I wanna try that as well!!! The Thai rice you used is regular rice and not glutinous rice, am I right?

I am confused, on one hand u said to fry til dry so it prolongs shelflife, next minute add water to it, wouldnt that negate the previous step
Hi! So sorry for this confusion! What I meant was that if you do not intend to consume this sambal immediately, then the drier it is , the longer you can store in the fridge. However, if you intend to consume it immediately, then you can add water to adjust the consistency that you desire. I should have made myself clear😢! Thanks for highlighting this!

Thank you for sharing your recipe. My late mother used to make this which we eat with buttered bread. I have a question what we can use to replace hae bee, as in recent years I find my skin gets very itchy after eating hae bee. I wonder if dried salted fish or pork/chicken floss can replace it?
Hi Jin Jin. You can substitute dried prawns with either dried anchovies, dried squid or dried scallops (though more expensive). Dried anchovies has the closest brininess profile as dried salted prawns. Just blend the anchovies into a paste. Add 2 tsp of sugar to your paste. Then cook as in the video. Hope this helps!❤

Is this dish still good after reheating from the freezer?
@@antcgop Yes! It still tastes good after putting in the freezer and then reheating. It freezes well for up to 2 months. Divide your curry into smaller portions so that it is easier to defrost. Put inside freezer safe containers that do not stain easily, with a lid. Another tip is to leave out the coconut milk before freezing. Then freeze. Only add the coconut milk when you reheat before serving. Hope this helps!

@@antcgop So sorry. I didn't make myself clear. What I meant is that if you cook a batch of curry kapitan and freeze the whole batch with the intention of serving it, maybe, a few weeks later, then it would be highly recommended that you omit the coconut milk before freezing. The reason is that coconut milk might shorten the shelf life, and becomes grainy when thawed. Personally, I think the coconut milk is more aromatic when freshly cooked. So, I suggest that you cook your curry without coconut milk first, then freeze it. When needed, thaw , cook and add coconut milk last. However, this above suggestion is not possible if you cook this curry, eat it and freeze the leftovers. It is still fine to eat though!

Hi! The traditional recipe for ban chiang kueh has yeast in the dough. Therefore, this pancake dough is slightly different from the ban chiang kueh dough. However, there is no harm using this pancake dough but substitute the blueberry filling with crushed peanuts, sugar and margarine. This will turn out delicious too!
