Thank you. I love to make my own bread. Problem is I'm disabled and have to wait for a good day. This makes life easier. I'll just make more and put what i don't need in the freezer for a later date. I've got a 6qt bowl lift KitchenAid. I can handle bigger batches. Ive got bread bags. Do you recommend wrapping the loaf in cling wrap and then placing in the bread bag to prevent ice crystals? I use slightly stale bread to make toast or even french toast. Can even turn into croutons. New subscriber. Thanks
You are wrong. With a 100% liquid starter then your starter has 50 grams of water. Add with the 350 grams of water, you get 400 grams of water. That a hydration of 90%
That part about the crumb predicting the weather is kind of true, I think. A falling barometer can make a big rise and an airy crumb . Less pressure pushing against the loaf! Conversely, a rising barometric pressure can lead to a little bit denser loaf.

Can you use the Brod & Taylor Folding Proofer & Slow Cooker to home a new sourdough starter that a person is starting? And if so do you cover the jar inside the proofer? What temperature would you set it at. I don't think the Folding Proofer has the ability to cool????

I only freeze sliced whole meal seeded packaged bread. I separate/space the slices in the bag, freeze, and then when I want a slice, I can easily separate each frozen slice and STEAM the slice, to bring it back to just baked fresh.

Bro u had me at the nsfw bit lol. I conquered rustic high hydrations doughs with commercial yeast and preferments fairly quickly. Natural leavening has been truly a humbling experience. But when it goes it goes so damn far 🫡😎
Plz presoak any dry items of this size that are folding into your dough. Otherwise it will rob moisture from the dough itself and inhibit the crumb and rise.
