    Best video on this yet. Use to cook porterhouse but always disappointing. Cooked 2 x oB in oven (1 was room temperature) and pan fry to finish. Cooked the 3rd straight in pan from fridge. Except for the grissle all were fantastic. Needs plenty of salt but that's meat. As i heard Adrian Richardson say, "Meat loves salt and salt loves meat".

    Plenty of educational goodness. I should have paid a lot more attention to this when it came out years ago. Cheers for sharing the knowledge.

    I love this video so much! I feel like I’m at a BBQ with my cool older cousin or one of my mates giving me advice on how to cook steak. I cooked my first oyster blade steak and with this video and I cooked it perfectly first go (which I never usually can do 😂). Thank you for taking the time to do this video, 3yrs later and it’s still helping people out!

      hah thanks! The mustard video was filmed but we both got super sidetracked with life, then the pandemic... then Luke moved country to open a brewery in NZ. We aren't saying Eats n Drinks is done... but it's on a long hiatus. Glad you liked it.

    Did he add honey to that?.. Won't the fermentation start again? better freeze that sucker first to kill everything off otherwise its sauce explosion time?

    • @eatsndrinksANZ
      @eatsndrinksANZ 4 года назад

      Potentially - but I don't think there'd be enough activity in the fridge to kick anything off again... which I know for sure because it's still there and not fermenting further. Good point though.

    Great info man! I’m working on a red jalapeño and habanero w/ mango and pineapple right now. From my guess you were going to say if the salt percentage is too high it will kill too much of the good bacteria which makes the fermentation process slow down... am I right? Haha

      My neighbours have a bird. I don't know how big it is but it is VERY loud and screechy. Also it's Ceramix? I don't know what that means - it was heaps expensive and I wish I just got stainless steel.

    Only tip I would give is you tie your apron at the front :P Doesn't require any dexterity, and it gives you a thin "belt" that you can hang a tea towel on to wipe your hands or fast access. It helps the apron fit your body a little better as well and doesn't flop around as much. Good tips, came here to see if oyster steaks required anything different to normal steaks.
