you are a good host.. personally i am not fluent with mandarin but i would very much still prefer you using mandarin as i'm learning from it (plus you are a good host) and i think there is a wider audience if you use mandarin. but yes, english subtitles will be helpful (or turn on the auto-translation offered by youtube)

Hokkien mee the soup one is the original Hokkien version. You get that in Penang and in Singapore and similar versions in Xiamen. However the fried hokkien mee in Singapore are done by the Teochews. kampua要做得香，一点粘粘的。kolo面粘粘就失败了，口感要好。laksa重点在汤，味道要浓。

干盤面属于诗巫，kolo 面是古晋的。拉沙我喜欢阳春臺。忘不了也过时了，现在出名的是黑皇帝鱼Black Emperor .

古晋的由来，其实是在大伯公庙有一个古井。大概100年前。 所以马来发音古井。就叫做Kuching 猫的意思。
