    I think the big piece we aren't talking about is your comparisons are between flat and conical burrs. There are distinct use cases for both, often dependent on the desired outcome in the cup. It's interesting to see the places the Casa shines vs Ode 2 and P64, specifically confirming that the modern light-roast drinker (drip and espresso) should take solace in a well built, well intentioned conical grinder in the Casa.

    Option-O Did a great job on the Mizen Omni Burrs, I had the original version of those that weren't sandblasted, I enjoyed them a lot more than the similar looking SSP Cast (v2) in 64mm which were probably my least favorite burrs. One thing I noticed and enjoyed on the Omni burrs is that it usually gave a nice clean lingering aftertaste.

    Good video which shows how well (and easy) Aiden extracts coffee. I agree with your tips to reduce astringency and also to go lower in temperature compared to what you set on your kettle when making a pour over. The environment in the Aiden is sealed and absolutely well controlled and it makes sense to go down in temperature. I also find myself enjoying the coffees (light roasts) around 1.4% TDS and at the same approximate EY as you. I implemented James Hoffmanns take on dark roasts (high bloom temp, 96-99C followed by one pulse, or more, at 80C) which works very well.

      So far I’ve only gone as low as 88C on the second pour with a bloom and 2 pulses. Do you get vegetal notes at 80C?

      @@SimonAndrewCoffee 99 times out of 100 we drink light roasted coffee so haven't been doing so many dark batches. The last time we made a batch was with a stale dark roast and we got some rubbery notes in the after taste... Can't remember I got vegetal notes earlier on but I will keep that in mind and report back :)

    So having a Ode2 would you upgrade to the CASA?

      I would go for the upgrade since I prefer more acidity and clarity in my pourover. The ability to brew for espresso is another bonus over the ode 2. I also find the casa to be cleaner and easier to dial in. Sometimes the acidity can be a bit too much, but it’s easy to fix with tweaks to the brew method or parameters.

      “Hi I’m not sure about the requirements for small businesses, but as a home user, consistency is great once dialed in for your coffee. That said, there’s no low water level warning and i’ve had a few brews get stuck after blooming, wasting my coffee. Maybe wait for v2? with fixes and upgrades, it could be a better option.

      Nice! I haven’t tried steeping the whole brew since I’ve been enjoying brighter acidity lately. Will definitely give it a shot with other coffee types. Enjoy your new Casa!

      I’ve been trying a new Colombian washed coffee with a strong white grape aroma right off brew. The acidity was a bit overpowering and sweetness was lacking. Tried steeping only and it helped balance the acidity and sweetness nicely.

    I've landed on a similar recipe with bloom and 2 pours. Got a bit strong today with finer grinds but tasted nicely with bypass. Then went coarser and was more balanced strength but had astringency. I've been thinking of dialing in an equal 3 pours (no bloom) recipe with around 10 s to 13 s between the pours. The early water should extract less than after a bloom similarly to bypass. Could maybe make less strong without astringency?

      ​​​@@SimonAndrewCoffeeI tried 3 equal pours no bloom and the brew is much more balanced in terms of sweetness and acidity than bloom 2x into 2 equal pours with 15 s between. Even though the three pours (without bloom) tasted quite bitter I sipped it up quickly. Will adjust grind or lower temp of last pour. I think astringency was low and balanced between acidity and sweetness was great. Not too strong either. 250 g water 16.5:1 3 pulses, 10 s wait 92c, 92c, 90c TBT 2:20 Melitta 1x4 paper (cut to fit)

    interesting to see how this compares with the femobook a68, which imo is the current kind of conical with respect to price/performance. judging by your comparison it seems the casa 65mm prefers lighter roasts instead of more traditional medium to dark, which could explain why your 64 outperforms in terms of body and sweetness. The femobook has more balance in this regard wth quite good body and sweetness for medium to dark and it light roast capable

      Casa should have less retention and is better for dual purpose I believe. Good for pourover or espresso. Specialita is alright, nice and quiet but has a decent amount of retention and flavour clarity is more blended, with higher body and likely more fines, which works for traditional espresso and milk drinks but not so well for pourovers, the adjustment system also sucks going back and forth from espresso to brew coffee.

      I don’t have the SSP burrs in my Ode2 grinder, just the gen 2 burrs. With the omni burrs in the p64, I think the ode2 with SSP UM burrs would offer more clarity.

    I have found the Aiden to brew bitter coffee... That's with the built in default recipes... Adjusting grind and amount of beans helps but in the end I can still taste bitter. It may be that it's too perfect and exposes the bean quality who knows. I've tried several different bean brands. I need to experiment and make my own recipe and see if I can calm the bitter. The brewer is very advanced but in the end if it can't brew a smooth cup of coffee then what is it's purpose?

      Totally agree, with so many options it can definitely get frustrating at times. Since you’ve tested many beans with the current profile, maybe try tweaking a few more parameters. Try to reduce the last pulse temp by 10-15deg or more or cut off the brew earlier to see if it helps with the bitterness.

      I got the 65CL in the mail today and swapped them for the 48MS - once I got it dialed I think I got more nuanced flavor from the same coffee I’d had earlier with the 48MS. Kinda hard to compare directly as the swap does take a few mins but maybe I’ll pre grind and try it out. Did note that for the bean I was using, the dialed setting of 6.0 on the 48MS translated to 7.6 on the 65CL (for the same profile/recipe/shot time). First shot I tried at 6.0 got me 11g out in 99 seconds lol

      @@nickr9784 interesting. My settings are very different. But, I'm starting to wonder if I never properly "zeroed" the 48... My espresso grind is close to 6-6.5 on the 65, which is a larger number than I expected as I was ~4.5 on the 48. Still figuring out my drip settings, but seems somewhere between 10.5-12 at the moment.

    Use the brewers cup winner method wirh the Hario Switch. In that method its a mixed pour over and second half immersion. Improves sweetness dramatically

    simple, prompt, thx! you did not include shot of the catch cup after getting out the grind, I assume it was quiet empty, no static. did you run into stalling issues so far? apparently certain Casa 65 batches might have problems with really light roast espresso, regardless the hot/cold start.

      yeah the grind cup empties cleanly for filter. For espresso, there are some fines but 1-2 taps get most of it out. No stalling issues so far.

    Do you know how they compare to the 48mm moonshine or niche zero for espresso?

      I don’t have the 48mm burrs or niche zero to compare. The niche zero is more for traditional espresso with medium/dark roasts and more body. The casa is closer to my P64 Omni, so they’d likely be quite different.

      Thanks! I agree about the build quality issues, I’ve had 2 brews stuck after the bloom phase. Other than that, I’ve been lucky with no major problems 😬. I got the Aiden hoping for more consistent brews, ease of use, and to experiment with different brew options. I believe it has delivered on consistency and good tasting coffee, I’ve been brewing more drip/filter coffee 😀 so I’m ok with the quality issues and am happy to continue brewing with it.

    I get consistently higher EY% using the batch brew shower AND basket using a 20 gram dose when compared (all else equal) to the single / single combo. Definitely results in a flat bed on the batch settings. Try it, just use medium profile for example on both and you will see.

    How does the Aiden compare with a moccamaster...especially as a batch brewer. I make 1.25 liters every morning can the Aiden do that? Wonder what the difference in flavor would be

    Thank you for the video’s keep making them. My advice is not to overcomplicate things otherwise you’ll never be happy. I used to be happy with over extracted coffee but since it became my hobby this year I think I threw away many coffee brews because my brews were not balanced. I just ordered a ode gen 2 grinder, I’m using zero water with apax lab minerals. I use a hario 01 v60 filter. My ratios is usually around 1:15. 15 grams of coffee and ending up around 240ml of coffee. I aim for a brewing time around 3 minutes. At the end I think I’ll end up with a fellow Aiden for consistency.

      Thanks Patrick agree with you. I try to get dialed in close to my preference after that I make minor tweaks to experiment. It's important to taste and enjoy the process not only dialing in for the perfect brew. Yes the fellow Aiden is good for consistency. Waiting for the phone app to be released and future updates to edit brews and adjust individual pour duration.

    Hi there. As regards heating of the dripper, I have been testing using the Hario Switch base (it can accommodate all "removable" Hario drippers") as a way to keep very hot water in contact with my ceramic dripper (not a Hario one). That is, placing the ceramic dripper on top of the Hario Switch, closing the switch and then pouring boiling water on top. I think this warmed well enough the dripper.

    I've found you have to open the lid and stir the grounds in the Aiden for single serve. Still producing bitter coffee for me.

      same here tried stirring and increasing the number of pours but I got bitter notes. can't remember which video but I remember seeing a flatter bed. Could be for larger batch brews

      Is it bitter and hollow/empty or just a hint of bitterness with good body. If the latter I would probably try to increase the coffee dose slightly (around 0.5-1.0g) and keep the grind size the same

      I think it was more hollow bitterness. I added more grinds but it got more bitter. Ended up reducing the ratio from 1:15 to 1:16 (400g : 25g). Was still bitter. Made the grind coarser and made my first smooth cup. No bitterness. I saw a Fellow video that says Aiden extracts efficiently. This grind is maybe like French press. Uncomfortably coarse. But the tweaks continue. Probably need a coffee spectrometer.
