Always place vegetables that grow underground in cold water, place vegetables above the ground in boiling water. So always put carrots in cold water, then bring to the boil and cook or blanch. This also applies to potatoes, etc.

This looks delicious, and something I think I'll make soon, but brotherman, that nonstick pan you used for the potatoes should have been thrown out long ago. Teflon is toxic, and you ingest it every time you eat something cooked in that pan. I see why it's in such bad shape when you use a metal spoon to spoon out the beef mix in that other nonstick pan.

Ive been making and freezing chips for decades so much nicer than the supermarket ones. I buy a big bag, spend a day making chips and freezing. I also make sweet potato chips. I love chips!

Cover dry peas with boiling water and teaspoon of bicarb and leave 'em overnight. Next day drain peas, put in pan cover with water, bring to boil and then turn down to simmer, stirring occasionally. That's real mushy peas.
