Hi Kim. Your words of experience really rang true to me. I am 53, diabetic, and am at my heaviest I've ever been. I too felt that my weight didn't hold me back until about 2 years ago. It hit me all at once after my 3rd bought of covid. Joint pain, out if breath, no energy, etc. Just seemed to be a perfect storm of age, diabetes, covid aftereffects, and foolishness... I am making changes and seeing small results. A little at a time. Just wanted to tell you how much I identified with your words. Thank you for having the courage to talk plainly. P.S. I also work from home (as a crisis counselor).

Hi Kim! Dont worry at all about people's opinions on food! As a fellow diabetic I have found that 99.9% of people (including diaticians) have absolutely no clue what they are talking about. So many people read something online and believe it as the gospel truth no matter how ridiculous. People also use food as a control method... Like you gently said: you find what works for you. Well said!! Keep up the great work. OBVIOUSLY what you are doing is working! The proof is in the diabetic pudding... 🙂

That is such a Me type dish! I don't generally use alcohols so don't know much about them. Are those small bottles readily available everywhere? and once opened do they go bad and how long will it last?

Looks really good! One observation is that you need to be careful using a metal whisk on a nonstick pan as it scratches it up basly and the fkecks if the Teflon get into the food which is not healthy. If you use a cast iron skillet it will fleck off iron which is fine and healthy.
