AMERICAN APPLE AND APRICOT CAKE
Ingredients
300g self raising flour
225g caster sugar
3 eggs
180g melted butter-unsalted and cooled down
3 medium-sized apples
120g dried apricots
30 almond flakes
1.25 tsp baking powder
1 tsp vanilla essence
Pinch of salt
1 Tbsp lemon juice
22 cm diameter lined baking tray and at least 5 cm deep
Bake at 160°C /Gas Mark 3/ 325° F for approximately 75 minutes , until golden in colour, firm to touch and begins to shrink away from the side of the tin.
Let it cool down for a few minutes in the tray, then turn out on a plate.
