❤️ classic recipes from Italy ❤️ my name's Marco Dilenge: 30 years of Italian Cooking experience, 50 years of Italian Eating experience. I'm sharing how to cook quality food quick & easy.
Based in Mandello del Lario at Lake Como, I got access to quality ingredients, from all over Italy, 100% natural. Some of them I grow in my backyard (truly "a chilometro zero").
Authentic Italian Cooking means:
1. AUTHENTICITY: preparing traditional Italian dishes the classic way - but being open to add a slight personal touch (which is common in Italy with its local variations).
2. SIMPLICITY: Italian dishes typically have few ingredients. Most of my recipes are easy to prepare - in about 20 minutes. By following the process in my videos, ANYONE should be able to re-cook them.
3. 100% MADE IN ITALY: I only use ingredients "made in Italy". This may guide you to buy the right groceries - imported from Italy to your country.

PARMIGIANA DI MELANZANE the original recipe made in Italy - fried & oven roast eggplant, no chicken!
How to cook parmigiana di melanzane the classic Italian way.
This traditional meal from the South of Italy is basically fried eggplant/aubergines, oven roasted with tomato sauce, including mozzarella & Parmigiano Reggiano.
In the Americas, there is a slightly similar dish known as "eggplant parmesan" (often cooked with chicken), but here is the traditional original Italian version explained in this 5 minutes tutorial.

I love your choices of tricolore if only my hubby can take the smell of gorgonzola il be happy. Here we heat up the Piadina in big pan the brown side first then turning around couple of times then flip on the other side. Enjoy your delish Piadina 🥰

Wow looks beautiful and delicious! Yes i can eat this without my hubby he could not take spaghetti and parmigiano . Thank you for sharing. Btw re the preps of fichi d india we brush it first soak in water then cut both ends and use fork to separate the skin it is much easier for us . Great job! ❤️❤️❤️🥰

the water helps to kkep it lsightly liquid, otherwise it will get too thickand difficult to mix with the pasta, Remember there is also pecorino and parmigiano, also the pasta soaks some water

Salt in direct contact with yeast is big NO in whatever recipe, it will "tame" yeast , you must let yeast activate, then add flour and after while add salt, i am always making first poolish which ferments for 16 hours in fridge, then i add additional flour and salt and then knead dough and then ferment it again for 16 hrs in fridge and then ball it and leave it 1-2 hr at room temp, this makes dough with lot of air bubbles, which will make pizza light and puffy
you are right, first sugar to support the yeast, and later salt can be added. Thanks for your input. Do you bake in a standard kitchen oven? Many roads lead to Rome :)

@@cvrljakromano that will also make a huge difference, one day I will also buy one.. :)
@@authenticitaliancooking yes it does make night and day difference, they are cheap now, you can buy small one for 200 euros, there are ways to bake similar pizza in home oven, check vito lacopelli channel

assolutamente si, ma puoi anche prepararlo durante l'inverno, io di solito mi compro una pianta di basilico da 2 euro e uso tutte le foglie

The real pesto alla genovese with 100% natural ingredients. Before you decide to buy pesto in a supermarket, please read the ingredients list, and then rethink! Traditional pesto alla genovese is a perfect recipe existing for centuries, it does not need to be „revisisted“, „elevated“ or „gourmetized“, but just replicated.
