    This is fascinating! Is there a difference in the forms / shapes that Seitan and fu take and are used in Japan? I know you say that both can be called Seitan but I wonder if there's a difference between gluten called fu and gluten called Seitan. I think my experience with wheat gluten has mostly been from Cantonese cooking or American adaptations.

    I have so much okara I don't know what to do with it all. I have been dehydrating it and using it as protein powder but I am overflowing with it. we make all of our own dairy from soy. this is very helpful. more like this please. i need as many ideas as I can get.
