Love your videos, man, but to be honest, you don’t look healthy. You need to consider going vegan. Humans are primates and primates are frugivores. We’re designed to thrive n fruits and vegetables. Go watch the film forks over knives and the game changers to get started. If you want to take it to another level read 80/10/10 by Doug Graham and find out about eating raw fruits and vegetables. Anyway, just wanted to mention this on the off chance you might consider it. Good luck.

Really pleased with this recipe. I can't kneed well anymore. I will purchase a ceramic bread pan. I have arthritis in hands. I like the mix with suitable mixing utensil and I dont mind the wait times at all. Good idea. Put in fridge overnight and then continue the next day. Any chance of a large size, Irish soda bread. With as much as your "not hands on" technique as that's usually where I mess up. Bread too dense/tight, not pleasant. Thank you. 😊⚘ P.s. Have subscribed and 👍.😊
Hi Maria! This recipe does not put the dough in the refrigerator overnight. Leave it out at room temperature. The high percentage of water versus flour (100%) helps produce an open crumb - very light. Thanks for watching.
@@ChefMikeP Oops! 🤭, Thank you for correcting me. I wouldn't have made a mistake on the breadmaking day. I would follow recipe line by line. Thank you. Would that work with half white half brown soda bread. Use equal amounts water and flour?
My guess is that it would work. Truth is I don’t know. It’s only a guess. Tell me about how would it be a big deal if you tried it and it didn’t work? I always experiment with questions like that and sometimes it fails! . . . and that’s OK with me.

I have made this for years, I gave the recipe to my Mom too. We call it over night bread. Rustic, and very easy
Why are you using weight
1. Consistency 2. Practicality. When adding multiple ingredients to a mixing bowl. You can add each one directly by zeroing your kitchen scale first, without dirtying, additional measuring cups, spoons, etc.

Me again, haha. As one who is quite comfortable with cooking and also baking, I was wondering if you could substitute some dark molasses in lieu of the coffee... as it would definitely provide the dark color, and may give it a nice added flavor note. Just a thought. 👍👍

Mike, LOVED your video!! My sister had texted me that she was going to try making the bread. That prompted me to Google and see if Thomas' still made it, as I had not seen it in grocery stores in ages. I thought, maybe it wasn't being sold in the NY market any longer (I live on LI). Thank you for the bit of history, and I appreciate you're delving deeper into the possible reason for its discontinuance. Sad, it was truly a great product!! I remember my Mom making us kids date nut bread and cream cheese sandwiches for our school lunch (and at home too) back in the late 1960s... And she used the Thomas' DNB. When you spread cream cheese on your bread, it brought a big smile to my face. I had told my wife that my Mom made us those sandwiched, just before I watched your video. Can't wait to try your recipe, thank you Mike!!

I've made Juniors cheesecakes several times for very special occasions and it is aways a HIT. I was living in Hawaii at the time, and the man sitting next to me said "who ever made the cheese cake did a great job" I told him I made it from a Juniors recipe and said it did taste just like a Juniors and also said he ate at Juniors almost every day as he was working just across the street from Juniors! I've tried other recipe but always come back to Juniors! Thanks for posting this video as I lost my recipe in the move back to the mainland

I'm all for less expense but I have to minimize unessential fats so I sometimes use a small dash of toasted sesame oil for it's concentrated flavor, lots of garlic, and leave out the cumin. Also different but delish! My friend swears by her dessert hummus... dates and cocoa. Endless varieties I guess!
