Wild Raspberry Muffins Made In an Ankarsrum Mixer
Hi Viewers!
I've left the sound of the mixer running for people who are curious about how it sounds.
I'm also working on revamping my website so I'll share this recipe here. These muffins are quick and easy to make and very versatile. You can switch out different berries including regular raspberries or blueberries. I hope you enjoy them!

Ingredients:
1/2 cup unsalted butter - room temperature
1/2 cup brown sugar
1/2 cup white sugar
2 Eggs - Large
1 Tsp Vanilla Extract
1/2 Cup Whole Milk
2 cups All Purpose Flour
2 Tsp Baking Powder
1/2 Tsp Kosher Salt
2 Tbsp lemon zest

Hello everyone, This recipe is from the cookbook Baking Favorites by Williams Sonoma. I tried to search online for the recipe to share, but the two I found were not the same as the one in the book. This recipe uses sour cream and wow! The muffins were moist and light with a lot of blueberries. Not too sweet which is what we like in this house. Thanks for watching! Heidi

Lemon Meringue Pie With Homemade Pie Crust

Hello! We start out with a homemade pie crust. The block of butter has been frozen and I used a box grater to shred the butter to make it easier to incorporate in the dough. I used a Lodge Cast iron pie pan to prebake the crust. Next is the lemon filling and finished with a meringue top. This pie is tart and sweet and tastes even better the next day. Thanks for watching.

    I love my Ankarsrum! I have had a big Kitchenaid for years. I researched before buying this great Swedish mixer. First time I used it, I knew it was better for breads! It is a remarkable piece of engineering. Before we discovered my daughter is gluten intolerant, I used it all the time to make fast pizza dough. It was sooo easy! Thanks for sharing a video that shows how well it works.

      Hi! Congrats on your purchase! I’m in Canada and several years ago it cost me $1000 Canadian Dollars which is about the same as you paid with the current conversion. I would love to get some of the accessories…maybe one day. Enjoy your new machine!

      Bei der Ankarsrum ist es genau umgekehrt. Zuerst die Flüssigkeiten und dann die trockenen Zutaten portionsweise. Sie macht es richtig.

    I’ve been making cardamom rolls since I was a kid and always love the smell. In my grandmother’s recipe box they were called “Iona’s Coffee Buns”. They were from her son-in-law’s Swedish grandmother. So simple and old fashioned. 😉

    I just got my Ankarsrum and plan to try this recipe today. After watching many videos on bread making with the Ankarsrum, I think after the flour is added, you set the arm about an inch from the rim and allow it to knead without moving back and forth???? I have also seen people stop adding flour once the dough pulls away from the side when you move the arm to the center. I guess I'll learn today..

    I've learned when you can pull the "kneeder" wheel to the center and the ingredients all follow cleanly you have the right amount of flour. It seems you hugely over-floured the bread, I was waiting to see the end result, but I noticed it wasn't shown. So the thing with the Ankarsrum is the adding the flour is something where the machine "talks to you". You add flour and intermittently pull the kneeder to the center and everything follows cleanly away from the wall, that's the clue the breads are " floured" properly. So many times I feel the strong urge to add more flour. - and sometimes I add a touch more cause it just feel right. But it has always turned out the machine it totally right lol.       "Arm." I wouldn't say "hugely." Maybe by 1/2 cup, if that. And once you get the "doughnut," you should probably add just a bit more flour.

    Your bread dough came together nicely. The open bowl is so useful for adding ingredients and not having a motor in the way. May I please ask, is your mixer the Creme or Light Creme colour? It's hard for me to tell on the computer display. Thank you.

      Hi Sashine. I love having the open top for adding ingredients. My mixer is the Creme colour. It’s a nice neutral since I wasn’t sure what colours my kitchen would be after renovations.

      @@HeidisWhatsBurning I LOVE Creme; it was a difficult tossup between it (very vintage; I understand it was the original color) and purple; purple won. 😊 I think it would be more accurate if the the Light Creme was called "creme" and the color of your mixer "Eggnog," because that's what it reminds me of.

      It's nice to hear from another Anker user! I've had a few bread failures in the past myself. For me, it's still a struggle with spelt flour. This is my first video and I did it to supplement the steps on my blog.
