For the Dry Ingredients:
Cake flour: 260g [2 1/8 cups]
Baking powder: 3g [¾ teaspoon]
Baking soda: 3g [¾ teaspoon]
Salt: 2g [½ teaspoon]
Pumpkin pie spice: 10g [1 tablespoon]
For the Wet Ingredients:
Vegetable oil: 156g [⅔ cup]
Castor sugar: 130g [⅔ cup]
Brown sugar: 65g [⅓ cup]
Maple syrup: 30g [2 tablespoons]
Vanilla extract: 5g [1 teaspoon]
Buttermilk: 120g [½ cup]
Pumpkin puree: 300g [1 ¼ cups]
Whole eggs: 2
Chocolate chips: 200g [1 cup]
Extra chocolate chips for topping: 50g [⅓ cup]
Bake at 165C/325F for 1 hour 25 to 1 hour 30 minutes, or until a skewer inserted in the center comes out with a few moist crumbs.
