@@TranT0m Let it come down in internal temp for like 1-2 hours before putting it in the SV. Do that and it'll come out amazing! If I know I'm going to have lunch the next day and want brisket, I'll do it the day prior and let it rest up until lunch time. Comes out perfect every time!
I have their cabniet smoker, never considered removing my plates, my smoker runs very well and hold temo excellent. I may give it a try in the morning, just worry about the long vertical smoke chamber pull air uneven
I'm not sure how it'll play out on a cabinet smoker. A pipe smoker depends largely on convection side to side where smoke can be missed out completely as it flows through vs air drawing in vertically. There can be hot spots sure but as far as smoke not reaching it's target I don't think that's the case with cabinet smokers. I could be wrong, I've never used an offset cabinet smoker personally but in a pipe smoker, you certainly don't want the smoke to be trapped under the plates with tiny little spaces in between, letting the majority of the smoke stay under the plates and then drawing outwards to the stack. You'll get some smoke flavor but nowhere near letting it run unrestricted and controlling your fire. I hope this makes sense.

De verdad que si. Yo no se que fue pero es algo que uno tiene que ver y pensar en las cosas. Ya son varias noches donde se escuchan pasos en el atico pero no hay nada ahi. Yo me e subido para instalar las camaras y no hay manera que una persona o un animal que este ahi. Saludos.

Absolutely, I'll more than likely add all kinds of meat into this series. Mesquite gets a bad rap but I don't think it's deserved. Mesquite has always been normal for us.

I’ve a lil one from pit boss the same happened to me I was able to save both the brisket and the smoker
I just smoked my sausage on my Traeger. They tasted great but the casings were so tough everyone had to rip the skin to get a bite. Do you think the smoker may have caused this tough skin?
Smoker is just part of it. People have smoked Sausages in old little shacks so yours shouldn't have an issue. If you smoke it at too high of a temperature you can still get a good bite but you'll have to make sure the sausage does not burst on you so keeping an eye on it is a must. Hope this helps!

Definitely not. I tried using it but the firebox was incredibly small. I'm pretty tied up with work which is why it's taking me a bit to make more videos but I'm also trying to get a larger propane tank so I can replace it and do a "What worked what did not work" and go from there. I appreciate looking for the updates! I do apologize for not doing better follow up videos.

That picanha still looked delicious, bro!! I've personally not tried one yet as I don't see them very often in my area. That controller was nothing but troubles for me, I think I vented to you about it before. I ended up buying a Grilla Grills controller as I liked all the features it had. It made a huge difference so now I call it the Grilla Boss. Lol. Nice video as always, sir!!
Thanks man and yeah this is a downer sometimes but I try to look at the upside to things. One being able to smoke Sausages at such low temps but I have a recteq if I want solid steady temps

Onlyfire is a good brand. I have rotisserie kit, charcoal baskets for Classic and Jr. Everything works and has held up for number of years. I don't know why they don't have accessories for PK360.
They are pretty legit. I'm still using it to this day!
I am going to do a sous vide rest on a pastrami for thanksgiving this year...I think ill be getting the same machine you got...but damn that bucket is expensive...might have to find my own container lol
You can make your own container, some people just use a regular cooking pot. Others use an old ice chest as well. I just looked at the price and man did things really get up in price from when I first made this video. Crazy as hell.
Question why do you have your vent cap up so high? What does that do for the smaker?
Convection. You shut it down too much and it wont have proper convection to light the pellets, too high and it can't feed pellets fast enough to stay at a consistent temp. Personally I do about 2 fingers width and that seems to be working well for me.
5:25 I was skeptical but I figured DG was 2 blocks away so long story short I tried it and it is literally spray and wipe just like the video.
No fake news here my man. It simply works great! Make sure you get a clean rag with water to rinse the chemical out, do a burn in and you are good to go!
The diffuser plate is there to diffuse the intense heat coming straight up out of the pellet pot where the pellets are burning.
My recteq bullseye deluxe can get to 1000 (I got it to 950) Bout to try this @ 500 on my aluminum GrillGrates flat side

came across your channel from your tri tip taco recipe. We had a similar situation with a screaming noise on our property. it could be bob cat, or mountain lion...not sure whereabouts you are, but we're in central TX, and they're definitely around here.
I'm down in the RGV and we definitely have bobcats. One tried to eat our cat but fortunately our cat ran up the tree and I went outside to scare it away. Definitely could be that, we don't have mountain lions here fortunately.

Absolutely! Many folks see the smoke setting as being too low but personally I feel this is a huge win especially for making sausages or get a better bark on meats.
